  • 2 slices provolone cheese — the melt insurance policy.
  • 1 large ripe tomato, sliced — heirlooms in summer are unbeatable.
  • 8–10 fresh basil leaves — don’t substitute dried; the fresh leaves are the whole point.
  • 2 tbsp softened butter — mixed with a clove of grated garlic for the outside of the bread.
  • 1 tsp balsamic glaze — the thick, syrupy kind (or reduce regular balsamic until syrupy).
  • Salt and freshly cracked black pepper — for seasoning the tomatoes.
  • Optional: pesto spread in place of the butter for extra basil punch.

How to Make It

The whole thing takes fifteen minutes. Here’s the café method, step by step.

  4. Grill low and slow. Heat a skillet over medium-low heat. Cook the sandwiches 3–4 minutes per side, pressing lightly with the spatula, until the bread is deep golden and the cheese is fully melted. Low heat is key — it melts the mozzarella before the bread burns.
  5. Rest and slice. Transfer to a board and rest 1 minute (the cheese sets slightly). Slice diagonally — always diagonally — and serve immediately.

Pro Tips for the Perfect Grilled Cheese

  • Medium-low heat, always. High heat burns the bread before the cheese melts — patience is the whole recipe.
  • Pat the mozzarella dry. Fresh mozzarella holds a lot of water; blotting it keeps the interior creamy, not wet.
  • Mayo instead of butter? A thin layer of mayonnaise on the outside gives an incredibly even, golden crust — try it once and you may never go back.
  • Don’t skip the rest. One minute on the board lets the cheese set so it doesn’t all slide out on the first cut.

Variations

  • Pesto caprese: Spread a thin layer of basil pesto on the inside of the bread instead of plain garlic butter.
  • Prosciutto caprese: Add two slices of prosciutto for a salty, meaty upgrade.
  • Heirloom tomato: In summer, use thick slices of heirloom tomatoes and flaky sea salt.
  • Panini press: Works beautifully — 4–5 minutes on medium heat.

What to Serve With It
