These peanut butter banana overnight oats are the reason I finally eat like a grown-up before 7 a.m.

The magic is simple: stir six pantry staples together before bed, tuck the jars into the fridge, and wake up to something that tastes like a treat but eats like a proper meal. The oats soften into a creamy, almost pudding-like texture, the peanut butter melts into every spoonful, and the banana keeps things naturally sweet without much added sugar. It takes roughly ten minutes of actual effort — less time than scrolling your phone in the bathroom, if we’re being honest.

  • 2 medium ripe bananas, divided — spotty, sweet bananas are ideal. Mash one into the base for flavor throughout; slice the other for topping.
  • 2 tablespoons honey or maple syrup — adjust to your sweetness. If your bananas are very ripe, you can skip this entirely.
  • 2 tablespoons chia seeds — these plump up overnight and make the oats thick, creamy, and extra filling. Don’t skip them if you can help it.
  • 1 teaspoon vanilla extract — rounds out all the flavors.
  • 1/2 teaspoon ground cinnamon — optional but lovely with banana and peanut butter.
  • Pinch of salt — makes the peanut butter flavor pop.

Instructions

  4. Divide into jars. Spoon the mixture evenly into 4 jars or containers, about 3/4 cup each. Leave a little headspace for toppings in the morning.
  5. Chill overnight. Cover and refrigerate for at least 6 hours, ideally 8. The oats soften, the chia plumps, and everything melds into creamy perfection.
  6. Top and serve. In the morning, stir each jar, top with sliced banana, a drizzle of peanut butter, and whatever extras you like. Eat cold straight from the jar — no heating required.

Pro Tips for Perfect Overnight Oats

  • Keep the ratio. The golden ratio is 1 part oats to 1 part milk (by volume). Too much milk and it’s soup; too little and it’s dry paste.
  • Stir once after 30 minutes. If you remember, give the jars a quick stir half an hour after making them — this keeps the chia from clumping at the bottom.
  • Warm the peanut butter first. 15 seconds in the microwave turns it into a pourable liquid that mixes in seconds, no lumps.
