Easy Chocolate Truffles

Here’s a little secret the chocolate industry doesn’t advertise: those gorgeous truffles in the fancy shop window are made from exactly three ingredients — chocolate, cream, and butter. That’s it. No preservatives, no mysterious “natural flavors,” no culinary degree required. These easy chocolate truffles prove that the most luxurious-tasting candy you can make at home is also one of the simplest.

The whole process is barely a recipe at all. You pour hot cream over chopped chocolate, stir until it turns into glossy ganache, chill it, roll it into balls, and tumble them through cocoa powder. Twenty minutes of actual work, most of it spent waiting for the chocolate to do its thing. They look like they came from a chocolatier, they taste like pure velvet, and they make people absurdly happy when handed over in a little box.

Why you’ll love this recipe

  • Three main ingredients. Chocolate, cream, butter — pantry simplicity with patisserie results.
  • No candy thermometer. If you can heat cream to a simmer, you can make these.
  • Perfect for gifting. A box of homemade truffles beats store-bought chocolate every single time.
  • Endlessly customizable. One batch of ganache becomes a dozen different truffles with different coatings and flavorings.
  • Make-ahead friendly. They keep for two weeks in the fridge, so holiday prep is painless.

Ingredients

For the ganache

  • 8 oz (227 g) dark or semisweet chocolate, finely chopped
  • 1/2 cup (120 ml) heavy cream
  • 2 tablespoons (28 g) unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • Pinch of fine sea salt

For coating (choose one or mix)

  • 1/3 cup (30 g) unsweetened cocoa powder
  • 1/2 cup (60 g) finely chopped toasted hazelnuts, pistachios, or almonds
  • 1/3 cup (55 g) chocolate sprinkles or crushed freeze-dried raspberries
Ingredients for chocolate truffles: dark chocolate, heavy cream, butter, and cocoa powder
Just chocolate, cream, butter, and coatings — that is all truffles need.

Instructions

  1. Chop the chocolate finely. Place the chocolate in a heatproof bowl. The finer you chop it, the faster and more evenly it melts — aim for pieces no bigger than a pea. This step genuinely matters, so don’t rush it.
  2. Heat the cream. Warm the heavy cream in a small saucepan over medium heat until it just begins to simmer around the edges, with tiny bubbles forming. Do not let it boil — boiling cream can make the ganache grainy.
  3. Make the ganache. Pour the hot cream over the chopped chocolate and let it sit completely undisturbed for 2 minutes. Then stir slowly from the center outward with a spatula until the mixture turns completely smooth, dark, and glossy.
  4. Finish the ganache. Stir in the room-temperature butter, vanilla extract, and salt until the butter melts fully into the ganache. The mixture should look like liquid silk.
  5. Chill until scoopable. Press plastic wrap directly onto the surface of the ganache (this prevents a skin from forming) and refrigerate for about 2 hours, until firm enough to scoop but not rock-hard.
  6. Roll the truffles. Using a small cookie scoop or a teaspoon, scoop out tablespoon-sized portions and roll quickly between your palms into balls. Work fast — the heat of your hands melts ganache quickly. If it gets too soft, pop it back in the fridge for 15 minutes.
  7. Coat and set. Roll each truffle in cocoa powder, chopped nuts, or sprinkles, turning to coat completely. Arrange on a parchment-lined tray and refrigerate for 30 minutes to set. Let them sit at room temperature for about 10 minutes before serving for the creamiest texture.

Tips for success

  • Use good chocolate. With only three ingredients, quality shows. Choose a bar or chips you enjoy eating plain — 60 to 70% cacao is the sweet spot.
  • Chop, don’t just break. Evenly chopped chocolate melts evenly; big chunks leave unmelted bits in your ganache.
  • Keep your hands cool. Run them under cold water and dry them before rolling, or wear food-safe gloves — warm hands are the enemy of neat truffles.
  • Don’t over-chill the ganache. If it gets rock-hard, let it sit at room temperature for 20 to 30 minutes before scooping.
  • Sift the cocoa coating. Lumpy cocoa makes lumpy truffles. A quick pass through a sieve gives that professional dusty finish.

Variations

  • Espresso truffles: Dissolve 2 teaspoons of instant espresso powder in the hot cream before pouring it over the chocolate.
  • Raspberry truffles: Stir 2 tablespoons of seedless raspberry jam into the finished ganache and coat in crushed freeze-dried raspberries.
  • Peanut butter truffles: Whisk 1/3 cup (85 g) of creamy peanut butter into the warm ganache and coat in chopped peanuts.
  • Mint truffles: Replace the vanilla with 1/2 teaspoon of peppermint extract and coat in crushed candy canes for the holidays.
  • Boozy truffles: Add 2 tablespoons of Grand Marnier, Kahlúa, or bourbon to the ganache in place of the vanilla — strictly for the grown-ups.

Storage and make-ahead

Finished truffles keep in an airtight container in the refrigerator for up to 2 weeks — the flavors actually deepen after a day or two. For longer storage, freeze them for up to 3 months in a single layer, then transfer to a freezer bag; thaw overnight in the fridge.

Serve truffles slightly below room temperature: pull them from the fridge about 10 minutes before serving so the centers turn creamy again. For gifting, pack them in mini paper cups inside a sturdy box, layered with parchment — they’ll travel beautifully as long as they stay cool.

Frequently asked questions

My ganache split and looks greasy. Can I save it?
Yes — this usually happens when the cream was too hot. Whisk in a tablespoon of warm milk, a little at a time, until the ganache comes back together smooth and glossy.

Can I use milk chocolate instead of dark?
You can, but reduce the cream to 1/3 cup (80 ml) since milk chocolate is softer and needs less liquid to set firmly. The truffles will be sweeter and milder.

Why are my truffles melting in my hands while I roll them?
Your hands are too warm or the ganache is too soft. Chill the ganache longer, work in small batches keeping the rest in the fridge, and roll quickly with cool, dry hands.

How far in advance can I make these for gifts?
Up to 2 weeks ahead, refrigerated. Box them the day you plan to give them, and mention they should be kept cool — homemade truffles have no preservatives, which is exactly the point.
