Pull-Apart Monkey Bread

Monkey bread is the kind of recipe that turns a regular weekend morning into an event. There’s no slicing, no plating, no manners — just a warm, caramel-soaked ring of cinnamon-sugar dough balls that everyone pulls apart with their hands while it’s still steaming. My kids call it “the bread you get to destroy,” and honestly, they’re not wrong.

The name’s origin is murky (some say it looks like a monkey puzzle tree, others that you pick at it like a monkey), but the technique is pure genius: bite-sized dough balls get rolled in cinnamon sugar, layered into a Bundt pan, and drowned in a buttery brown-sugar caramel that bakes into sticky magic in the oven. The outside pieces go crisp and caramelized; the inside stays soft and pillowy.

Yes, you can make monkey bread with canned biscuit dough, and on a busy morning that’s a fine shortcut. But a simple homemade yeast dough — just 25 minutes of hands-on time — gives you a texture no shortcut can touch: chewy, fluffy, and rich with butter. Let’s make it properly.

Why You’ll Love This Recipe

  • Interactive and fun — no slicing required; everyone just pulls off their piece.
  • Homemade dough, easy method — one soft yeast dough, no fancy shaping skills needed.
  • Gooey caramel throughout — the brown-sugar sauce bakes into every crevice.
  • Crowd-sized — one Bundt pan feeds 12, perfect for brunch gatherings and holidays.
  • Endlessly riffable — try chocolate chips, orange zest, or a cream cheese glaze.

Ingredients

For the dough

  • 3½ cups (440g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 2¼ teaspoons (1 packet, 7g) instant yeast
  • 1 teaspoon fine sea salt
  • ¾ cup (180ml) whole milk, warmed to 110°F (43°C)
  • ¼ cup (60ml) water, warmed to 110°F (43°C)
  • ¼ cup (57g) unsalted butter, melted
  • 1 large egg, at room temperature

For the cinnamon-sugar coating

  • ¾ cup (150g) granulated sugar
  • 2 teaspoons ground cinnamon
  • ½ cup (113g) unsalted butter, melted

For the caramel sauce

  • ¾ cup (165g) packed light brown sugar
  • ¼ cup (57g) unsalted butter
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ cup (30g) chopped pecans (optional)
Bowls of flour, sugar, butter, cinnamon and milk arranged on a wooden counter
Simple pantry ingredients for the dough, coating and caramel.

Instructions

  1. Mix the dough. In a large bowl, whisk together the flour, granulated sugar, instant yeast, and salt. Add the warm milk, warm water, melted butter, and egg. Stir with a wooden spoon until a shaggy dough forms and no dry flour remains.
  2. Knead. Turn the dough onto a lightly floured surface and knead 8–10 minutes until smooth, elastic, and slightly tacky but not sticky. (Or knead with a stand mixer and dough hook, 6–7 minutes on medium-low.) Place in a lightly greased bowl, cover, and let rise in a warm spot 60–90 minutes, until doubled in size.
  3. Shape the balls. Generously grease a 10-cup Bundt pan. Punch the dough down and divide it into about 40 pieces, each roughly 1 tablespoon of dough. Roll each piece into a smooth ball between your palms — don’t worry about perfection; rustic is fine.
  4. Coat and layer. Put the melted butter in one bowl and the cinnamon-sugar in another. Working one at a time, dip each dough ball in butter, roll in cinnamon sugar, and nestle into the Bundt pan. If using pecans, sprinkle some between layers as you go.

  1. Second rise. Cover the pan loosely and let rise 30–45 minutes, until the dough is puffy and nearly reaches the top of the pan. During the last 15 minutes, preheat the oven to 350°F (175°C).
  2. Make the caramel. In a small saucepan, combine the brown sugar, butter, vanilla, and cinnamon. Warm over medium heat, stirring constantly, until the butter melts and the mixture is smooth and just beginning to bubble, 2–3 minutes. Pour evenly over the risen dough — it will seep down between the balls.
  3. Bake. Bake 30–35 minutes, until the top is deep golden brown and the center registers 190°F (88°C) on an instant-read thermometer. If the top browns too quickly, tent loosely with foil after 20 minutes.
  4. Unmold. Cool in the pan for exactly 10 minutes — too long and the caramel glues itself to the pan; too short and the bread collapses. Run a thin knife around the edges, place a serving plate over the pan, and flip. Lift the pan away slowly. Serve warm, and let everyone pull their own pieces.

Tips & Variations

  • Don’t skip the thermometer check. With this much dough packed together, the center is the last to bake. 190°F (88°C) internally means it’s done — no doughy middles.
  • Grease thoroughly. Get butter into every flute of the Bundt pan, or the caramel will weld the bread in place.
  • Chocolate version: press a few chocolate chips into each dough ball before rolling.
  • Orange twist: add 1 tablespoon of orange zest to the cinnamon sugar for a bright, holiday-worthy flavor.
  • Savory option: skip the sugar and caramel; roll the balls in garlic butter and Parmesan instead.
  • For another pull-apart-style showstopper, try our Brazilian cheese bread, or keep the brunch theme going with fluffy blueberry buttermilk pancakes.

Storage

Monkey bread is best eaten warm on the day it’s baked — that’s when the caramel is gooey and the edges are crisp. Leftovers keep at room temperature, tightly wrapped, for 2 days; reheat individual portions in the microwave for 15–20 seconds or in a 325°F (165°C) oven for 8 minutes. To make ahead, assemble the coated balls in the pan the night before, cover, and refrigerate. The next morning, let it sit at room temperature for 45–60 minutes until puffy, then add the caramel and bake.

FAQ

Can I use canned biscuit dough?

Yes — it’s the classic shortcut. Cut each biscuit into quarters, coat, layer, and bake. Reduce the bake time slightly and check the center with a thermometer. The texture will be biscuit-like rather than bread-like, but still delicious.

Why is my monkey bread raw in the middle?

Underbaking is the #1 monkey bread problem. The Bundt pan insulates the center, so always check the internal temperature — 190°F (88°C) means done. If the top browns early, tent with foil and keep baking.

Can I make it without a Bundt pan?

A 9×13-inch pan or a large oven-safe skillet works too — you’ll get a slab of pull-apart bread instead of a ring. Bake time stays roughly the same; just verify the center temperature.

Can I freeze monkey bread?

Baked monkey bread freezes okay for up to 1 month, wrapped tightly. Thaw overnight and warm in a 325°F (165°C) oven for 15 minutes. Honestly, it’s so much better fresh that I’d freeze the unbaked coated balls instead and bake day-of.
