Tall blueberry streusel muffins with golden crumb topping in a muffin tin

There are muffins, and then there are bakery muffins — the tall, domed, streusel-capped kind with berries bursting through the top that you buy for an unreasonable price and eat in the car before you even get home. These are those muffins. Domed tops, jammy pockets of blueberry, a tender crumb that stays moist for days, and a buttery cinnamon streusel that shatters just slightly when you bite in.

The secret to the whole operation is restraint at exactly one moment: when you combine the wet and dry ingredients. Muffin batter should be mixed until it just barely comes together — a few flour streaks are not just acceptable, they’re desirable. Overmixing develops gluten, and gluten is what turns a tender muffin into a rubbery little hockey puck. Fold, don’t stir. Then walk away.

A few other details elevate these from good to great: sour cream in the batter for moisture and a subtle tang, filling the cups nearly to the top for maximum dome, and a hot initial oven that gives the muffins a burst of lift. Toss the blueberries in a spoonful of flour so they don’t all sink, and you’re most of the way to muffin perfection.

Why You’ll Love This Recipe

  • Bakery-style domes — full cups and a hot oven give you those tall, proud muffin tops.
  • Stays moist for days — sour cream and melted butter keep the crumb tender long after baking.
  • Buttery cinnamon streusel — a crunchy, sweet cap that takes 5 minutes and tastes like a coffee cake.
  • Jammy blueberry pockets — 1 1/2 cups of berries means fruit in every single bite.
  • One bowl, 40 minutes — from craving to warm muffin in under an hour, no mixer needed.

Ingredients

For the Streusel Topping

  • 65 g (1/2 cup) all-purpose flour
  • 65 g (1/3 cup, packed) light brown sugar
  • 3 g (1/2 teaspoon) ground cinnamon
  • 60 g (1/4 cup) cold unsalted butter, cut into small cubes

For the Muffins

  • 250 g (2 cups) all-purpose flour
  • 150 g (3/4 cup) granulated sugar
  • 10 g (2 teaspoons) baking powder
  • 3 g (1/2 teaspoon) baking soda
  • 5 g (1 teaspoon) fine sea salt
  • 115 g (1/2 cup) unsalted butter, melted and cooled slightly
  • 2 large eggs, at room temperature
  • 120 g (1/2 cup) sour cream
  • 60 ml (1/4 cup) whole milk
  • 10 ml (2 teaspoons) vanilla extract
  • 225 g (1 1/2 cups) fresh blueberries, plus a few extra for topping

Sour cream is the secret to a crumb that stays moist for days.

Instructions

  1. Make the streusel. In a small bowl, combine the flour, brown sugar, and cinnamon. Add the cold cubed butter and rub it in with your fingertips until you have a mixture of coarse crumbs and pea-sized clumps. Don’t overwork it into a paste — you want texture. Refrigerate while you make the batter; cold streusel holds its crumble better in the oven.
  2. Heat the oven. Preheat to 400°F (200°C). Line a standard 12-cup muffin tin with paper liners, or grease it well.
  3. Combine the dry ingredients. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. Whisking aerates everything and distributes the leaveners evenly, which means a more even rise.
  4. Combine the wet ingredients. In a medium bowl or large measuring cup, whisk the melted butter, eggs, sour cream, milk, and vanilla until completely smooth. Room-temperature eggs blend in much more easily than cold ones, so pull them out of the fridge when you start.
  5. Fold — gently. Pour the wet mixture into the dry ingredients. Using a rubber spatula, fold just until combined, with a few small streaks of flour still visible. This should take no more than 10 to 12 folds. I mean it: stop early. The batter will look lumpy, and that’s exactly right.
  6. Add the berries. Toss the blueberries with a tablespoon of flour from your measured amount (this helps suspend them in the batter), then fold them in with 3 or 4 gentle strokes. A few berries will burst and streak the batter purple — consider it decoration.
  7. Fill and top. Divide the batter among the 12 muffin cups, filling each nearly full — about 1/4 cup of batter per cup. Full cups are what create the domed bakery tops. Crumble the cold streusel generously over each muffin, pressing it lightly so it adheres, and press a few extra blueberries into the tops.
  8. Bake. Bake for 20 to 22 minutes, until the tops are golden brown and a toothpick inserted into the center comes out with moist crumbs clinging (melted blueberry doesn’t count — aim for a spot without a berry). Cool in the pan for 5 minutes, then transfer to a wire rack. Try to wait until they’re merely warm rather than molten.

Tips and Variations

  • Frozen blueberries work: Use them straight from the freezer — don’t thaw, or they’ll bleed everywhere. Add 2 to 3 extra minutes to the bake time.
  • Lemon-blueberry: Add the zest of one lemon to the sugar and rub it in with your fingers before mixing. Bright, fragrant, and wonderful.
  • Even taller domes: Fill only 6 cups (alternating) for maximum heat circulation, or start at 425°F (220°C) for 5 minutes then drop to 375°F (190°C) for the remaining 15 to 17 minutes.
  • Streusel troubleshooting: If your streusel melted into a flat layer, the butter was too warm or overworked. Next time, keep everything cold and leave distinct crumbs.
  • Make them yours: Swap the blueberries for raspberries, chopped strawberries, or a mix. A batch of these alongside our pumpkin coffee cake covers every brunch craving at once.

Storage

Store cooled muffins in an airtight container at room temperature for up to 3 days — the sour cream keeps them remarkably moist. For longer keeping, wrap individually and freeze for up to 3 months; thaw at room temperature or warm in a 350°F (175°C) oven for 10 minutes. A 15-second microwave refresh brings back the just-baked softness. They pack beautifully for lunchboxes next to something sweet like peanut butter cookies.

FAQ

Why did all my blueberries sink to the bottom?

Tossing the berries in a tablespoon of flour before folding them in gives them grip in the batter. Also, a thicker batter (like this one) suspends fruit better than a thin one.

Can I make these without sour cream?

Plain Greek yogurt is the best substitute — same amount, same tangy moisture. In a pinch, buttermilk works too, though the crumb will be slightly less rich.

How do I get the streusel to stay crunchy?

Keep the streusel cold until the moment it goes on the muffins, and don’t press it in too hard. Store baked muffins uncovered for the first few hours if your kitchen is humid, then seal them up.

Can I make mini muffins?

Yes! Use a mini muffin tin, fill the cups full, and bake at 400°F (200°C) for 11 to 13 minutes. You’ll get about 30 mini muffins — perfect for parties.

Warm from the oven, with the streusel still crisp and the berries jammy — that’s the moment these muffins were made for. And when blueberry season fades, the same tender base welcomes whatever fruit is at its peak.
