Good brioche is a small miracle of baking chemistry: nearly half a pound of butter and four eggs somehow suspended in a dough that still holds its shape, bakes up impossibly soft, and slices like a dream. I’ve made this recipe on repeat for years — for French toast weekends, for holiday bread baskets, for that Tuesday when dinner needed something special — and it has never once let me down.

The one thing you need to know before you start is that brioche rewards patience. The dough is sticky and uncooperative when it’s warm, which is why it goes into the fridge overnight. That cold rest does two things: it firms the butter so the dough becomes silky and easy to shape, and it develops a deep, complex flavor that a same-day dough simply can’t match. Plan ahead and the actual hands-on work is under an hour.

What you get for the wait is the richest, most luxurious crumb in the bread world — shreddably soft, faintly sweet, with a mahogany crust that crackles when you press it. It’s the kind of loaf that makes an ordinary Tuesday feel like a occasion, and it makes the best French toast you’ll ever eat. If you’re in a breakfast-baking mood, pair it with a pan of fluffy blueberry buttermilk pancakes or a plate of warm pumpkin coffee cake and call it brunch.

Why You’ll Love This Recipe

  • Unbeatable texture: feathery, custardy crumb with a tender, buttery pull-apart structure.
  • Overnight method: the cold ferment builds flavor and makes shaping foolproof.
  • One loaf, endless uses: toast, French toast, bread pudding, sandwiches — it does it all.
  • Freezer-friendly: bakes into a loaf that freezes beautifully for up to 2 months.
  • Real technique, explained: clear cues at every step so you know exactly what “done” looks like.

Ingredients

For the Dough

  • 3 3/4 cups (470 g) bread flour
  • 1/3 cup (65 g) granulated sugar
  • 2 1/4 teaspoons (7 g) instant yeast
  • 1 1/4 teaspoons (8 g) fine sea salt
  • 4 large eggs plus 1 egg yolk, at room temperature
  • 1/3 cup (80 ml) whole milk, at room temperature
  • 1 cup (226 g) unsalted butter, soft and cut into tablespoon-sized pieces

For Finishing

  • 1 egg beaten with 1 tablespoon milk, for egg wash
Ingredients for rich brioche bread arranged mise en place: bread flour, fresh eggs, milk, and a plate of soft butter cubes
The building blocks of brioche: bread flour, eggs, milk, sugar, yeast, and plenty of soft butter.

Instructions

  1. Mix the dough. Whisk the flour, sugar, yeast, and salt together in the bowl of a stand mixer. Add the eggs, yolk, and milk and mix on low with the dough hook until a shaggy mass forms, about 2 minutes.
  2. Develop the gluten first. Knead on medium for 6 to 8 minutes. The dough should pull away from the sides of the bowl and stretch thin enough to see light through without tearing (the windowpane test). This step matters — adding the butter before the gluten develops makes the dough greasy and weak.
  3. Add the butter slowly. With the mixer running on medium, add the soft butter one piece at a time, waiting until each piece is fully absorbed before adding the next. This takes about 4 minutes. Then knead 8 to 10 more minutes until the dough is silky, smooth, and elastic. It will slap the sides of the bowl and come together into a glossy ball.
  4. Bulk rise, then chill. Cover the bowl and let the dough rise at room temperature for 1 to 1 1/2 hours, until nearly doubled. Then refrigerate overnight, 8 to 12 hours. The dough will firm up dramatically — that’s the butter setting, and it’s exactly what you want.

Shaping the cold brioche dough into four smooth balls before the final proof in the loaf pan.
  1. Shape the loaf. Butter a 9×5-inch loaf pan. Turn the cold dough out onto a lightly floured surface, divide into 4 equal pieces, and roll each into a tight ball by cupping your hand over it and dragging it across the counter. Arrange the four balls side by side in the pan.
  2. Final proof. Cover loosely and proof at room temperature for 1 1/2 to 2 hours, until the dough crests just above the rim of the pan and a gently poked indentation springs back slowly.
  3. Bake. Heat the oven to 350°F (175°C). Brush the top of the loaf gently with egg wash, taking care not to let it pool in the crevices. Bake 30 to 35 minutes until deep golden brown all over; an instant-read thermometer should read 190°F (88°C) in the center. Tent with foil for the last 10 minutes if the top browns too quickly.
  4. Cool before slicing. Cool in the pan for 15 minutes, then turn out onto a rack and cool completely — at least 1 hour — before slicing. Cutting too early compresses the crumb.

Tips and Variations

  • Room-temperature butter is non-negotiable: it should give easily when pressed but not be melty or oily. Too cold and it won’t incorporate; too warm and the dough turns to soup.
  • No stand mixer? You can knead by hand, but expect 20+ minutes of vigorous kneading and a very sticky workout. Use the slap-and-fold technique and resist adding extra flour.
  • Chocolate chip brioche: fold 3/4 cup (130 g) of mini chocolate chips into the dough just before shaping. It’s dangerously good warm.
  • Savory version: cut the sugar to 2 tablespoons and add 1 cup (100 g) of shredded gruyère during the last 2 minutes of kneading for an incredible sandwich loaf.
  • Brioche à tête: for the classic fluted shape, divide the dough into one large ball and one small ball, nest the small one on top, and bake in a brioche mold for 25 to 30 minutes.

Once you’ve got this loaf down, you’ll find yourself reaching for it constantly — it’s the foundation for the best bread pudding and the softest dinner rolls, and it toasts better than anything else in my kitchen. For another enriched-dough classic, my hearty bread recipe is a leaner, everyday counterpart.

Storage

Brioche keeps at room temperature in a bread bag or tightly wrapped for up to 3 days. For longer storage, slice the cooled loaf, wrap the slices in plastic, and freeze in a zip-top bag for up to 2 months — toast straight from frozen. Refrigerating the baked loaf dries it out, so don’t. Stale brioche is a gift in disguise: cube it for bread pudding or French toast casserole.

FAQ

Can I skip the overnight chill?

You can — let the dough rise until doubled (about 1 1/2 hours), then chill just 1 hour to firm it for shaping. But the flavor won’t be as developed, and the dough will be harder to shape. The overnight rest is really worth it.

Why is my dough so sticky?

Warm brioche dough is supposed to be sticky — that’s the high butter and egg content. Resist the urge to add flour; it will firm up beautifully in the fridge. If it never comes together during kneading, your butter may have been too warm.

Can I use all-purpose flour instead of bread flour?

Yes, but the crumb will be slightly less chewy and structured. If you use all-purpose, you may need to reduce the milk by a tablespoon since it absorbs less liquid.

How do I know the loaf is done inside?

The most reliable test is temperature: 190°F (88°C) in the center. The loaf should also sound hollow when tapped on the bottom and be deep golden — not pale gold — on top.
