  • 5 g (1 teaspoon) baking soda
  • 5 g (1 teaspoon) fine sea salt
  • 3 g (1/2 teaspoon) ground cinnamon
  • 80 g (2/3 cup) chopped toasted walnuts (optional)

Instructions

  1. Prep the pan and oven. Preheat the oven to 350°F (175°C). Grease a 9×5-inch (23×13 cm) loaf pan with butter and line it with parchment paper, leaving overhang on the two long sides to use as handles later.
  2. Mash the bananas. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth — a few small lumps are fine and actually desirable. You should have about 1 1/2 cups. If your bananas aren’t ripe enough, roast them in their skins at 350°F for 15 minutes until black and soft; it concentrates their sweetness beautifully.
  3. Mix the wet ingredients. Whisk the melted butter into the mashed bananas, then whisk in both sugars until well combined. Add the eggs one at a time, whisking well after each, then whisk in the sour cream and vanilla until the mixture is smooth and glossy.
  4. Fold in the dry ingredients. Sprinkle the flour, baking soda, salt, and cinnamon evenly over the wet mixture.   6. Bake. Bake for 55 to 65 minutes, until the top is deep golden brown with the classic crack down the center, and a toothpick inserted into the middle comes out with moist crumbs clinging but no wet batter. If the top is browning too quickly after 40 minutes, tent loosely with foil.
  7. Cool before slicing. Let the loaf cool in the pan for 15 minutes, then use the parchment handles to lift it out onto a wire rack. Cool completely — at least 1 hour — before slicing. Warm banana bread is fragile and will crumble; patience gives you clean, beautiful slices.
