Let me be clear about something up front: this is not a pumpkin coffee cake. (The site already has a wonderful pumpkin coffee cake, and it deserves its spotlight.) This is the classic — the one your grandmother probably made — built on sour cream for a crumb so tender it practically dissolves, with a ribbon of cinnamon sugar running through the middle and a mountain of buttery streusel on top.

There’s a reason this cake has survived every food trend since the 1950s. It’s a one-pan, no-fuss bake that tastes like a hug: rich without being heavy, sweet without being cloying, and absolutely perfect next to a hot cup of coffee. I’ve brought it to brunches, book clubs, and one very memorable baby shower, and I’ve never once brought home leftovers.

The sour cream is the whole game here. It adds moisture and a faint tang that keeps the cake from tasting one-note, and its acidity reacts with the baking soda for an extra-tender crumb. If you’ve never baked with sour cream before, prepare to become a convert — it’s the same trick that makes my favorite cheesecake so luscious. And if cinnamon is your love language, my bakery-style cookies have a snickerdoodle cousin worth meeting.

Why You’ll Love This Recipe

  • Sour-cream tenderness: the crumb stays moist for days — no dry coffee cake here.
  • Double cinnamon: a swirl through the middle AND a streusel lid on top.
  • One pan, no layers: all the drama of a layer cake with a fraction of the work.
  • Make-ahead magic: assemble the night before and bake in the morning.
  • Freezer-friendly: bakes into slices that freeze and reheat beautifully.

Ingredients

For the Cake

  • 1/2 cup (113 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 cup (240 g) full-fat sour cream, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt

For the Cinnamon Swirl

  • 3/4 cup (150 g) packed brown sugar
  • 2 tablespoons ground cinnamon

For the Streusel Topping

  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (100 g) packed brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup (113 g) unsalted butter, cold and cubed
  • 1/2 cup (60 g) chopped walnuts or pecans (optional)

Sour cream, brown sugar, butter, and plenty of cinnamon — everything for the classic coffee cake.

Instructions

  1. Prep. Heat the oven to 350°F (175°C). Butter a 9×13-inch baking pan and dust lightly with flour, tapping out the excess.
  2. Make the streusel. In a medium bowl, combine the flour, brown sugar, cinnamon, and salt. Add the cold butter cubes and rub them in with your fingertips until you have coarse crumbs with some pea-sized lumps — those lumps become the best crunchy bits. Stir in the nuts if using. Refrigerate while you make the batter so the butter stays cold.
  3. Mix the swirl. Stir the brown sugar and cinnamon together in a small bowl and set aside.
  4. Make the batter. In a large bowl, beat the softened butter and granulated sugar with a mixer for 2 to 3 minutes until light and fluffy. Beat in the eggs one at a time, then the sour cream and vanilla until smooth. In a separate bowl, whisk the flour, baking powder, baking soda, and salt; fold into the wet ingredients just until no flour streaks remain. The batter will be thick — that’s correct.
  5. Layer it up. Spread half the batter evenly in the prepared pan (an offset spatula helps). Sprinkle the entire cinnamon-sugar swirl mixture over it in an even layer. Dollop the remaining batter over the swirl and spread gently to cover — a few swirl streaks peeking through are fine and pretty.

  1. Top with streusel. Sprinkle the chilled streusel evenly over the top, covering the batter completely. Press it very lightly so it adheres.
  2. Bake. Bake 50 to 55 minutes, until the top is deep golden, the edges pull slightly from the pan, and a toothpick inserted in the center comes out clean or with a few moist crumbs (no wet batter). If the streusel browns too fast, tent loosely with foil for the last 10 minutes.
  3. Cool and serve. Cool in the pan on a rack for at least 20 minutes — the swirl needs time to set. Serve warm or at room temperature, cut into generous squares.

Tips and Variations

  • Room-temperature dairy matters: cold sour cream and eggs can make the batter curdle and bake unevenly. Set them out 30 to 45 minutes ahead.
  • Overnight option: assemble the whole cake (streusel included), cover, and refrigerate overnight. Bake straight from the fridge, adding 5 to 10 minutes.
  • Apple version: fold 1 1/2 cups of diced tart apples into the batter for an apple-cinnamon coffee cake that tastes like fall.
  • Glaze it: whisk 1 cup powdered sugar with 2 tablespoons milk and drizzle over the cooled cake for extra sweetness.
  • Skip the nuts: the streusel is excellent without them if there’s an allergy — add 2 extra tablespoons of flour to compensate.

This is the cake I make when I want the house to smell like a bakery and the morning to feel unhurried. Serve it with strong coffee, good company, and absolutely no agenda. For a fruitier brunch companion, molten chocolate lava cakes are overkill — save those for dessert and let this cake have the morning.

Storage

Covered at room temperature, this cake stays moist for up to 3 days — the sour cream is doing its job. For longer storage, wrap individual squares tightly and freeze for up to 2 months; thaw at room temperature or warm in a 300°F (150°C) oven for 10 minutes. It also reheats beautifully in the microwave, 20 seconds per slice.

FAQ

Can I use Greek yogurt instead of sour cream?

Yes — full-fat plain Greek yogurt works as a 1:1 substitute and gives a very similar tender crumb, just slightly less rich. Don’t use nonfat; the fat is doing real work here.

Why did my streusel sink into the cake?

Usually the butter was too warm when mixed, or the streusel pieces were too fine. Keep the butter cold, make generous lumps, and chill the streusel while you mix the batter.

Can I bake this in a Bundt pan?

You can, but layer the batter, swirl, batter, then streusel in the Bundt and bake 55 to 65 minutes. Cool 15 minutes before inverting — the streusel becomes the base.

How is this different from your pumpkin coffee cake?

That one is a spiced pumpkin batter with a cream cheese swirl — pure fall. This is the year-round classic: vanilla-sour cream cake, cinnamon-sugar ribbon, brown-sugar streusel. Different cake entirely.
