Blueberry Crumble Bars

Some desserts are greater than the sum of their parts, and blueberry crumble bars are exhibit A. A buttery shortbread crust, a thick layer of fresh blueberries that bake down into something between a jam and a pie filling, and a golden crumble topping that shatters when you bite in. Three layers, one bowl of dough, zero complicated technique.

What I love about bar cookies is their honesty. They don’t pretend to be fancy. You press dough into a pan, scatter fruit, crumble more dough on top, and the oven does the rest. An hour later you have sixteen perfect squares that work for a picnic, a potluck, a lunchbox, or a Tuesday night when only something buttery and blue will do.

The real trick here is using one dough for both the crust and the crumble. It keeps the ingredient list short and the flavor cohesive — every bite tastes intentionally, deliciously buttery.

Why You’ll Love This Recipe

If you’ve ever wanted pie flavor without pie effort, these bars are your answer:

  • One dough, two jobs. The same buttery mixture becomes both the pressed crust and the crumble topping — less measuring, less cleanup.
  • Jammy blueberry center. Fresh berries bake into a thick, glossy filling that’s sweet, bright, and just tart enough.
  • Buttery and crisp. Cold butter in the dough gives the crust a shortbread snap and the topping a golden crunch.
  • Travels beautifully. Sturdy, hand-held, and mess-free — ideal for picnics, parties, and bake sales.
  • Endlessly adaptable. Swap the fruit with the seasons and you have a year-round recipe.

Ingredients

For the Crust and Crumble

  • 1 cup (200g) granulated sugar.
  • 1 teaspoon baking powder — gives the crust a slight lift so it’s tender, not dense.
  • 3 cups (375g) all-purpose flour.
  • 1/4 teaspoon fine salt.
  • 1 teaspoon lemon zest — brightens the buttery dough.
  • 1 cup (226g) cold unsalted butter, cut into cubes.
  • 1 large egg.
  • 1 teaspoon vanilla extract.

For the Blueberry Filling

  • 4 cups (590g) fresh blueberries — about 2 pints; look for plump, firm berries.
  • 1/4 cup (50g) granulated sugar — adjust to your berries’ sweetness.
  • 2 tablespoons (16g) cornstarch — thickens the juices into a sliceable filling.
  • 1 tablespoon fresh lemon juice.
  • 1 pinch fine salt.

Instructions

  1. Prep the oven and pan. Heat the oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the two long sides so you can lift the bars out later.
  2. Make the dough. In a large bowl, whisk together the sugar, baking powder, flour, salt, and lemon zest. Add the cold butter cubes and cut them in with a pastry blender, two knives, or your fingertips until the mixture looks like coarse crumbs with some pea-sized bits remaining.
  3. Add the egg. Whisk the egg and vanilla together in a small bowl, then pour over the crumb mixture. Stir with a fork until the dough starts to clump together. It will look dry and shaggy — resist the urge to add liquid. Squeeze a handful: if it holds together, it’s perfect.
  4. Form the crust. Set aside about 1 1/2 cups of the crumb mixture for the topping. Press the remaining dough firmly and evenly into the bottom of the prepared pan, using the bottom of a measuring cup to get it flat and compact. A well-packed crust holds together when sliced.
  5. Prepare the filling. In a medium bowl, toss the blueberries gently with the sugar, cornstarch, lemon juice, and salt until the berries are evenly coated and the cornstarch disappears.
  6. Assemble. Spread the blueberry mixture evenly over the crust, right to the edges. Crumble the reserved topping mixture over the berries in an even layer, leaving some larger chunks — those bake up into the crispiest, most irresistible bits.
  7. Bake. Bake for 45 to 50 minutes, until the crumble topping is golden brown and the blueberry filling is bubbling thickly around the edges. The bubbles are your doneness cue — they mean the cornstarch has activated and the filling will set.
  8. Cool completely. Set the pan on a wire rack and cool for at least 1 1/2 to 2 hours. This step is crucial: the filling needs time to set, and cutting warm bars gives you blueberry soup. Once fully cool, lift the slab out with the parchment overhang and cut into 16 bars with a sharp knife.

Tips for Success

  • Pack the crust firmly. A loosely pressed crust crumbles apart when sliced. Really tamp it down — the flat bottom of a glass works beautifully.
  • Keep the butter cold. Cold butter creates steam pockets as it bakes, giving the crust and crumble their tender, short texture.
  • Don’t skimp on the cornstarch. Blueberries release a lot of juice. Without enough thickener, the filling won’t set and the bars will be impossible to cut cleanly.
  • Look for the bubbles. The filling is done when it’s bubbling thickly, not just around the edges but across the surface. Pale, lazy bubbles mean it needs more time.
  • Cool completely — really. I know it’s hard. But warm bars fall apart. Two hours of patience rewards you with perfect, clean slices.
  • Line the pan. The sugary filling will glue itself to an unlined pan. Parchment with overhang makes removal effortless.

Variations

  • Mixed berry bars: Use any combination of blueberries, raspberries, blackberries, and chopped strawberries — keep the total at 4 cups.
  • Peach crumble bars: Swap the blueberries for 4 cups of diced fresh peaches and add 1/2 teaspoon of cinnamon to the filling.
  • Lemon blueberry: Double the lemon zest in the dough and add 1 tablespoon of lemon zest to the filling for a brighter, tangier bar.
  • Oat crumble topping: Replace 1 cup of the flour in the topping portion with old-fashioned rolled oats for a heartier crunch.
  • Almond twist: Add 1/2 teaspoon of almond extract to the dough and scatter 1/3 cup of sliced almonds over the topping before baking.

Storage and Make-Ahead

These bars are fantastic keepers. Store them in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week — the crust stays crisp either way. They also freeze beautifully: wrap individual bars tightly and freeze for up to 3 months. Thaw at room temperature for an hour, or warm briefly in a 325°F (165°C) oven.

You can prepare the crumb dough a day ahead and refrigerate it (press the crust and keep the topping separate, covered). Assemble with the fresh berries just before baking for the best texture.

Frequently Asked Questions

Can I use frozen blueberries?
Yes. Don’t thaw them first — toss the frozen berries directly with the sugar, cornstarch, lemon juice, and salt, and add 5 to 10 minutes to the bake time. The filling may be slightly juicier, so make sure it’s bubbling thickly before you pull the pan.

Why did my bars fall apart?
Almost always because they were cut while warm. The filling needs the full cooling time to set. A loosely packed crust is the other common cause — press it down firmly.

Can I halve this recipe?
Absolutely. Bake it in an 8×8-inch pan for 35 to 40 minutes. Everything else stays the same.

Do these need to be refrigerated?
Not for the first couple of days — they’re fine at room temperature in an airtight container. Beyond that, or in a hot kitchen, refrigerate them to keep the buttery crust fresh.
