Pumpkin Spice Babka

We’re ending the October bakery series with a twist — literally. Babka is the showstopper of the bread world: rich, buttery dough rolled around a spiced filling, sliced open, and twisted into a braid that bakes into gorgeous marbled layers. It looks like three days of pastry school; it took an afternoon.

For our Halloween finale, I gave the classic chocolate babka an autumn makeover: a pumpkin spice filling made with real pumpkin puree, dark brown sugar, and a generous dose of pumpkin pie spice. The result tastes like the love child of a cinnamon roll and a pumpkin pie, with a crumb so soft it practically melts. The sugar syrup brushed on at the end gives it that glossy bakery-case shine.

Don’t let the twisting intimidate you — the technique is simple: roll, chill, slice, twist. When you pull this out of the oven, you’ll feel like a genius.

Why You’ll Love This Recipe

  • Stunning with simple technique — the slice-and-twist method creates bakery-worthy swirls with no braiding skills needed.
  • Perfect Halloween centerpiece — pumpkin spice everything, in the most impressive form possible.
  • Soft, rich crumb — the brioche-style dough stays tender for days thanks to the butter and eggs.
  • Make-ahead friendly — the dough loves an overnight rest in the fridge, which also makes it easier to shape.
  • Freezer-friendly — bakes beautifully from frozen slices for instant cozy breakfasts.

Ingredients

For the dough

  • 3¼ cups (405g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 2¼ teaspoons (1 packet, 7g) instant yeast
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground cinnamon
  • ½ cup (120ml) whole milk, warmed to 110°F (43°C)
  • 2 large eggs, at room temperature
  • ½ teaspoon pure vanilla extract
  • ½ cup (113g) unsalted butter, softened to room temperature

For the pumpkin spice filling

  • ¾ cup (185g) pumpkin puree (not pumpkin pie filling)
  • ½ cup (100g) packed dark brown sugar
  • 2 teaspoons pumpkin pie spice
  • ¼ teaspoon fine sea salt
  • 3 tablespoons (42g) unsalted butter, very soft
  • ½ cup (85g) mini chocolate chips (optional but wonderful)

For the sugar syrup

  • ¼ cup (50g) granulated sugar
  • ¼ cup (60ml) water

Instructions

  1. Make the dough. In a large bowl, whisk together the flour, sugar, yeast, salt, and cinnamon. Add the warm milk, eggs, and vanilla, and mix into a shaggy dough. Now add the softened butter one tablespoon at a time, kneading it in fully before adding the next. This takes patience — the dough will look greasy and separated at first, then suddenly come together into a smooth, silky, elastic ball. Total kneading time: 10–12 minutes by hand, 8–10 with a stand mixer and dough hook.
  2. First rise. Shape into a ball, place in a lightly greased bowl, cover, and rise in a warm spot for 1½–2 hours, until doubled. (Overnight option: after 30 minutes at room temperature, refrigerate 8–12 hours. Cold dough is actually easier to roll and twist — and the flavor is deeper.)
  3. Make the filling. While the dough rises, stir the pumpkin puree, brown sugar, pumpkin pie spice, salt, and soft butter together until smooth and spreadable. Taste it — it should be boldly spiced, since the flavor mellows in baking.
  4. Roll and fill. Grease a 9×5-inch loaf pan. On a lightly floured surface, roll the dough into a 16×12-inch rectangle. Spread the pumpkin filling evenly over the dough, leaving a ½-inch border on all sides. Sprinkle with the mini chocolate chips if using. Starting from a long side, roll the dough up into a tight log and pinch the seam closed.

The slice-and-twist technique creates the signature swirls.
  1. Chill, slice, twist. Refrigerate the log for 15 minutes — this firms the butter so the layers slice cleanly. With a sharp chef’s knife, cut the log in half lengthwise, exposing the beautiful filling layers. Lay the halves cut-side up, then twist them over each other like a rope, keeping the cut sides facing up as much as possible. Pinch the ends together and tuck the twist into the prepared loaf pan. It won’t look perfect. It will look amazing anyway.
  2. Second rise. Cover loosely and let rise 45–60 minutes, until puffy and the dough has risen about 1 inch above the pan rim. During the last 15 minutes, preheat the oven to 350°F (175°C).
  3. Bake. Bake 40–45 minutes, until deep golden brown on top. The center is the last to bake, so check with a thermometer — 190°F (88°C) internally means done. If the top browns too quickly, tent loosely with foil after 25 minutes.
  4. Syrup and cool. While the babka bakes, simmer the sugar and water in a small saucepan for 2 minutes until the sugar dissolves. The moment the babka comes out of the oven, brush the hot loaf generously with syrup — it will soak in and leave a gorgeous glossy finish. Cool in the pan for 15 minutes, then turn out onto a rack and cool at least 1 hour before slicing. Use a serrated knife and a gentle sawing motion to show off the swirls.

Tips & Variations

  • The chill is not optional. Warm babka dough smears instead of slicing, and you’ll lose those defined layers. Fifteen minutes in the fridge makes all the difference.
  • Use a sharp knife, not a serrated one, for the lengthwise cut — you want one clean slice through the log.
  • Don’t skip the syrup. It keeps the crumb moist for days and gives the loaf its professional shine.
  • Chocolate babka: swap the pumpkin filling for ¾ cup (130g) chocolate chips melted with ¼ cup (57g) butter, plus 2 tablespoons cocoa powder and ¼ cup sugar.
  • Nutty version: add ½ cup (60g) toasted chopped pecans to the pumpkin filling.
  • For more pumpkin inspiration this season, try our pumpkin coffee cake — and if you love swirled breads, our banana bread is a cozy classic.

Storage

Thanks to the syrup soak, babka stays soft at room temperature for 3 days — wrap tightly in plastic wrap or store in an airtight container. For longer keeping, slice the cooled loaf, wrap slices individually, and freeze for up to 2 months. Toast frozen slices directly, or warm in a 325°F (165°C) oven for 10 minutes. It also makes the best French toast you’ve ever had.

FAQ

My babka didn’t get those pretty swirls. What happened?

Usually the log wasn’t chilled before slicing, so the filling smeared instead of cutting cleanly. Or the twist was done cut-side down, hiding the layers. Keep the cut sides facing up as you twist, and don’t worry — even a messy babka tastes incredible.

Can I use pumpkin pie filling instead of pumpkin puree?

No — pumpkin pie filling is pre-sweetened and pre-spiced, which throws off the filling’s balance and makes it too wet. Use plain pumpkin puree (the can should list only pumpkin as the ingredient).

Can I make the dough ahead?

Absolutely, and it’s actually better. After the first 30 minutes of rising, refrigerate the dough overnight (up to 16 hours). Shape it straight from the fridge — cold dough rolls and twists beautifully.

Why is my babka doughy in the middle?

Babka is dense and the center takes a while. Always verify 190°F (88°C) internally with a thermometer rather than going by color alone. If the top is done but the center isn’t, tent with foil and keep baking.
