Golden, flaky and bubbling — homemade chicken pot pie with a silky cream sauce.

Creamy chicken pot pie with golden flaky crust in a white pie dish

Few dishes deliver comfort the way a chicken pot pie does. Crack through that shattering golden crust and you find a steaming landscape of tender chicken, sweet carrots and peas, all suspended in a sauce so silky it barely holds together — in the best way. This is the pie that fixes bad days.

The secret to a great pot pie is balance: a filling thick enough to slice cleanly but still lusciously creamy, and a crust that stays crisp on the bottom instead of turning soggy. This recipe nails both, with a from-scratch cream sauce that takes ten minutes and a few smart tricks for a perfect bake. Looking for more cozy chicken dinners? These chicken Caesar wraps are a lighter weeknight option, and crispy air fryer chicken tenders are always a hit with the whole family.

Use a rotisserie chicken to make this genuinely weeknight-friendly, or poach chicken breasts while the vegetables cook. Either way, one slice of this pie and you will understand why it has been an American classic for generations.

Why You’ll Love This Recipe

  • Silky from-scratch sauce: A quick butter-flour roux with broth and cream beats any canned soup, and it takes just 10 minutes.
  • No soggy bottom: Baking on a preheated sheet pan keeps the bottom crust crisp and golden.
  • Weeknight friendly: Rotisserie chicken and store-bought crust get this on the table in about 75 minutes.
  • Slices cleanly: The filling is thickened just right and a 15-minute rest means picture-perfect wedges.
  • Endlessly adaptable: Swap in turkey, add mushrooms or potatoes, or go crustless — it always works.

Ingredients

For the filling

  • 3 cups (420 g) cooked chicken, diced (from about 1 1/2 lb / 680 g raw chicken)
  • 6 tbsp (85 g) unsalted butter
  • 1 large yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/2 cup (60 g) all-purpose flour
  • 2 cups (480 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1 cup (130 g) frozen peas
  • 1 tsp dried thyme (or 1 tbsp fresh thyme leaves)
  • 1 1/2 tsp (9 g) kosher salt
  • 1/2 tsp (1 g) freshly ground black pepper

For the crust

  • 1 package (14 oz / 400 g) refrigerated pie crusts (2 rounds), or homemade double crust
  • 1 large egg beaten with 1 tbsp water, for egg wash

Everything for a perfect pot pie: chicken, fresh vegetables, cream and a flaky crust.

Instructions

  1. Sauté the vegetables. Melt the butter in a large, deep skillet over medium heat. Add the diced onion, carrots and celery with a pinch of salt and cook, stirring occasionally, until softened and the onion turns translucent, 6 to 8 minutes. Do not let them brown — you want sweet, tender vegetables, not caramelized ones.
  2. Make the roux. Sprinkle the flour over the vegetables and stir constantly for 2 full minutes. The mixture will look pasty and pale — that is exactly right. Cooking the flour now removes any raw, pasty taste from the finished sauce, so do not cut this step short.
  3. Build the cream sauce. Pour in the chicken broth a little at a time, whisking constantly to keep it smooth, then whisk in the heavy cream. Bring to a gentle simmer and cook, stirring, for 3 to 5 minutes, until the sauce thickens enough to heavily coat the back of a spoon. It should be the consistency of a thick gravy — remember it will loosen slightly as the vegetables release moisture in the oven.
  4. Fold in the chicken and peas. Remove the skillet from the heat and stir in the diced chicken, frozen peas (no need to thaw), thyme, salt and pepper. Taste and adjust the seasoning — the filling should taste fully seasoned on its own. Let it cool for 10 to 15 minutes; a slightly cooled filling is less likely to make the bottom crust soggy.
  5. Assemble the pie. Place a rimmed baking sheet in the oven and preheat to 400°F (200°C) — the hot sheet is your insurance against a soggy bottom. Unroll one pie crust into a 9-inch (23 cm) pie dish, letting the excess hang over the edge. Spoon in the cooled filling, mounding it slightly in the center. Lay the second crust over the top, trim the overhang to about an inch, fold the edges under and crimp decoratively. Cut 4 to 5 slits in the top crust so steam can escape.
  6. Bake until deeply golden. Brush the top crust all over with egg wash for that gorgeous glossy finish. Set the pie directly on the preheated baking sheet and bake for 35 to 40 minutes, until the crust is deep golden brown and the filling bubbles thickly through the vents. If the edges brown too fast, shield them with strips of foil after 20 minutes. The internal filling should be steaming and bubbling — that is how you know it is done.
  7. Rest before slicing. This is the hardest step: let the pie rest for a full 15 minutes. The filling needs this time to set, and cutting too early will send it cascading across the plate. Then slice into wedges and serve warm.

Tips & Variations

  • Rotisserie shortcut: A store-bought rotisserie chicken gives you 3 cups of juicy meat with zero extra cooking — shred the breast and thigh meat and you are done.
  • Keep everything cold: Cold crust, cool filling. If your kitchen is warm, chill the assembled pie for 20 minutes before baking for the flakiest result.
  • Turkey pot pie: This is the single best use for leftover Thanksgiving turkey — swap it in 1:1 for the chicken.
  • Add potatoes: Dice a russet potato small and cook it with the other vegetables for an even heartier filling.
  • Top-crust only: For a quicker version, skip the bottom crust and bake the filling in a skillet with just the top crust — equally delicious.

Storage

Refrigerate leftovers for up to 4 days. Reheat slices in a 350°F (175°C) oven for 15 to 20 minutes to re-crisp the crust (the microwave makes it soggy). The unbaked assembled pie freezes well for up to 3 months — bake from frozen at 375°F (190°C) for 60 to 70 minutes, shielding the crust as needed.

FAQ

How do I prevent a soggy bottom crust?

Three things: bake the pie on a preheated baking sheet, let the filling cool slightly before assembling, and make sure the sauce is thick — thin, soupy filling is the number one cause of soggy bottoms.

Can I make chicken pot pie ahead of time?

Yes. Assemble the pie completely, cover and refrigerate for up to 24 hours, then bake straight from the refrigerator, adding about 10 extra minutes to the baking time.

Can I use frozen vegetables instead of fresh?

You can, but thaw and pat them dry first — frozen vegetables release a lot of water that can thin the sauce. The peas go in frozen because they are small and release very little liquid.

Why did my filling spill out when I cut it?

It was cut too soon. The filling needs a full 15-minute rest to set up. Also check that your sauce was thick enough before assembling — it should heavily coat a spoon.
