Shattering layers, creamy filling, vanilla glaze — weekend brunch just got an upgrade.

There’s a particular joy in walking past a bakery case and thinking, “I could make that” — and with cream cheese danishes, you genuinely can. Store-bought puff pastry does all the heavy laminating work, and the filling is just cream cheese beaten silky with sugar, vanilla, and a whisper of lemon zest. Twenty-five minutes of hands-on time, and your kitchen smells like a Parisian pâtisserie.

These danishes hit all the right notes: shattering golden layers on the outside, cool and tangy-sweet cream cheese in the middle, and a thin vanilla glaze that cracks when you bite in. They’re the kind of pastry that turns an ordinary Saturday into an occasion — or makes a brunch spread feel complete next to something chocolatey like our molten chocolate lava cakes.

The beauty of this recipe is how customizable it is. Master the basic cream cheese danish once, and you can riff endlessly — a spoonful of jam under the filling, fresh berries on top, a drizzle of chocolate. And if flaky breakfast pastries become your thing, our gipfeli recipe is the perfect next project.

Why You’ll Love This Recipe

  • Bakery results, beginner effort — puff pastry handles the layers; you just fill, fold, and bake
  • Tangy-sweet filling — lemon zest and vanilla keep the cream cheese from tasting flat
  • Ready in 45 minutes — no overnight laminating, no special equipment
  • Brunch showstopper — they look impressive but assemble in minutes
  • Endlessly adaptable — add fruit, jam, or chocolate to make them your own

Ingredients

For the Danishes

  • 1 package (17.3 oz / 490 g) frozen puff pastry, thawed (2 sheets)
  • 8 ounces (225 g) cream cheese, softened to room temperature
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 pinch fine sea salt
  • 1 large egg, beaten with 1 tablespoon water (egg wash)

For the Glaze

  • 3/4 cup (90 g) powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
Ingredients for cream cheese danish pastries including puff pastry, cream cheese, egg, sugar, vanilla, and lemon
Store-bought puff pastry does the heavy lifting; the filling is just cream cheese, sugar, vanilla, and lemon.

Instructions

  1. Prep. Preheat the oven to 400°F (200°C). Line two baking sheets with parchment paper. Make sure your puff pastry is thawed but still cold — if it’s warm and floppy, chill it for 15 minutes before rolling.
  2. Make the filling. Beat the softened cream cheese and granulated sugar until completely smooth, about 2 minutes with an electric mixer or a sturdy whisk. Lumps now mean lumps in the filling, so be thorough. Beat in the egg yolk, vanilla, lemon zest, and salt until creamy. Pop the filling in the fridge while you work the pastry — cold filling holds its shape better during baking.
  3. Cut the pastry. On a lightly floured surface, roll each puff pastry sheet to about a 10-inch (25 cm) square. Cut each sheet into 4 squares for 8 total. Place the squares on the prepared baking sheets, leaving a couple inches between them.
  4. Fill and fold. Spoon about 2 tablespoons of the cream cheese filling into the center of each square. Fold two opposite corners up and over the filling, pressing them together gently where they overlap — a tiny dab of water helps them stick. Or skip the fold for an open-faced danish; both are traditional.

Spoon the chilled filling into the center of each pastry square, then fold two corners over.
  1. Egg wash and bake. Brush the exposed pastry with egg wash, keeping it off the filling (egg wash on the filling bakes into a rubbery skin). Bake for 16-18 minutes until dramatically puffed and deeply golden brown.
  2. Make the glaze. While the danishes bake, whisk the powdered sugar, milk, and vanilla until smooth. It should ribbon off the whisk — add milk a few drops at a time if it’s too thick.
  3. Glaze and serve. Let the danishes cool for 5 minutes so the filling sets slightly, then drizzle generously with glaze. Serve warm or at room temperature — they’re best the day they’re made.

Tips & Variations

  • Room-temp cream cheese is non-negotiable. Cold cream cheese makes a lumpy filling no amount of beating will fix. Leave it out for an hour, or microwave in 10-second bursts.
  • Blueberry or cherry. Add a teaspoon of jam under the cream cheese filling, or top each danish with a few fresh berries before baking.
  • Chocolate danish. Tuck a couple of chocolate chips into the filling — they melt into little pockets of heaven.
  • Keep pastry cold. If the kitchen is warm or you’re working slowly, slide the baking sheet into the fridge for 10 minutes before baking. Cold pastry = maximum puff.
  • Dock the centers. For open-faced danishes, prick the center of each square with a fork so the middle stays flat while the edges puff into a rim.

Storage

Danishes are at their peak the day they’re baked, but they’ll keep in an airtight container at room temperature for 1 day or in the fridge for 3 days. Rewarm in a 350°F (175°C) oven for 5-7 minutes to crisp the layers back up. Freeze baked, unglazed danishes for up to a month; reheat from frozen at 375°F (190°C) for 10-12 minutes, then glaze fresh.

FAQ

Can I use homemade puff pastry or pie dough?

Homemade puff pastry works beautifully if you have the time. Pie dough will taste good but won’t give you the signature flaky layers — it’s a different pastry entirely.

Why did my filling leak out?

Too much filling is the usual cause — stick to about 2 tablespoons per danish. Cold filling and sealed folds also help. A little oozing is normal and still delicious.

Can I assemble them the night before?

Yes. Assemble the filled, folded danishes on the baking sheet, cover tightly with plastic wrap, and refrigerate overnight. Brush with egg wash and bake straight from the fridge, adding 1-2 minutes to the bake time.

How do I thaw puff pastry?

Overnight in the fridge is best. In a pinch, leave it on the counter for 30-40 minutes — it should be pliable but still cold. If it gets warm and sticky, chill it back down.
