Classic Key Lime Pie

Some desserts taste like a place, and classic key lime pie tastes like the Florida Keys — sunshine, sea breeze, and that unmistakable pucker of tiny, fragrant key limes. This is the real-deal version: a buttery graham cracker crust, a silky custard made from sweetened condensed milk, egg yolks, and fresh lime juice, and a cloud of softly whipped cream on top. Sweet, tart, creamy, crunchy — every slice is a perfect little study in contrasts.

Here is the beautiful secret of key lime pie: it is one of the easiest pies you will ever make. There is no fussy lattice, no blind baking with weights, no temperamental meringue. You press crumbs into a pan, whisk four ingredients together, and bake for less than twenty minutes. The refrigerator does the rest of the work while you get on with your day.

I make this pie all summer long, but honestly it earns its spot year-round — that bright citrus lift cuts through the richness of holiday tables just as well as it refreshes a backyard barbecue. Let’s make one.

Slice of key lime pie with whipped cream and lime zest

Why you’ll love this recipe

  • Authentically tart and creamy — real key lime juice makes all the difference.
  • Foolproof method — whisk, pour, bake; no special skills needed.
  • Only 15–18 minutes in the oven — the fridge does the heavy lifting.
  • Make-ahead magic — it needs hours of chilling, so it’s built for planning ahead.
  • Stunning with zero effort — whipped cream and lime zest make it party-ready.

Ingredients

For the graham cracker crust

  • 1 1/2 cups (180 g) graham cracker crumbs (about 12 full sheets)
  • 1/3 cup (65 g) granulated sugar
  • 6 tablespoons (85 g) unsalted butter, melted

For the lime filling

  • 1 can (14 ounces / 396 g) sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup (120 ml) fresh key lime juice (from about 12 key limes)
  • 1 tablespoon finely grated key lime zest

For the whipped cream topping

  • 1 cup (240 ml) heavy cream, cold
  • 2 tablespoons (15 g) powdered sugar
  • 1/2 teaspoon (2.5 ml) pure vanilla extract
  • Lime slices and extra zest, for garnish

Instructions

  1. Heat the oven. Preheat to 350°F (175°C). Have a 9-inch (23 cm) pie plate ready — no greasing needed.
  2. Build the crust. Stir the graham cracker crumbs, granulated sugar, and melted butter in a bowl until every crumb is moistened and the mixture holds together when squeezed. Press it firmly and evenly across the bottom and up the sides of the pie plate, using the bottom of a glass to compact it.
  3. Bake the crust. Bake for 8 to 10 minutes, until lightly golden and fragrant. Set aside to cool slightly while you mix the filling. Leave the oven on.
  4. Whisk the filling. In a medium bowl, whisk the sweetened condensed milk, egg yolks, key lime juice, and lime zest until smooth, pale, and slightly thickened — about 1 minute of whisking. You will notice it thicken almost magically as the acid meets the milk.
  5. Fill and bake. Pour the filling into the warm crust and smooth the top. Bake for 15 to 18 minutes, until the edges are set and the center still has a slight jiggle when you nudge the pan. It will firm up completely as it chills.
  6. Chill thoroughly. Cool the pie to room temperature (about 1 hour), then refrigerate for at least 3 to 4 hours, or overnight, until fully cold and set.
  7. Whip and serve. Just before serving, beat the cold heavy cream, powdered sugar, and vanilla to soft, billowy peaks. Dollop generously over the pie or pipe decorative swirls, then garnish with lime slices and a shower of zest. Slice with a warm, dry knife for the cleanest cuts.

Tips for success

  • Use real key limes if you can. They are smaller, seedier, and more aromatic than Persian limes. Bottled key lime juice is a fine backup; regular lime juice works but tastes less floral.
  • Don’t overbake. A slight jiggle in the center is exactly right — the pie sets fully in the fridge. Overbaking can make the filling rubbery or cracked.
  • Pack the crust tightly. A firmly pressed crust holds together when sliced; a loose one crumbles.
  • Chill the bowl for whipping. Cold cream whips faster and holds its peaks longer, especially on a warm day.
  • Zest before juicing. It is nearly impossible to zest a squeezed lime half, so always zest first.

Variations

  • Coconut key lime pie: add 1/2 cup (40 g) of sweetened shredded coconut to the crust and sprinkle toasted coconut over the whipped cream.
  • Key lime bars: bake in an 8×8-inch (20×20 cm) pan lined with parchment; same temperatures, check 5 minutes early.
  • Meringue topping: swap the whipped cream for a torched Swiss meringue for a showstopper finish.
  • Gingersnap crust: replace the graham crackers with gingersnap crumbs for a warm, spicy contrast to the tart filling.
  • Frozen key lime pie: freeze the finished (untopped) pie for a firm, ice-cream-like summer dessert; top with whipped cream just before serving.

Storage and make-ahead

Key lime pie is a natural make-ahead dessert. The baked pie (without the whipped cream) keeps in the refrigerator, loosely covered, for up to 3 days — and many swear it tastes even better on day two as the flavors meld. Add the whipped cream topping just before serving so it stays fresh and lofty.

You can also freeze the pie for up to a month: wrap it tightly in plastic wrap plus foil, thaw overnight in the refrigerator, and top with freshly whipped cream. Leftover slices keep in an airtight container in the fridge for 3 days.

Frequently asked questions

Can I use regular limes instead of key limes?
Yes — the pie will still be delicious, just slightly less aromatic. Use the same 1/2 cup of fresh juice. Bottled key lime juice is actually closer to the traditional flavor than fresh Persian lime juice.

Why is my filling lumpy?
The egg yolks probably weren’t whisked in thoroughly. Whisk the condensed milk and yolks smooth before adding the juice, and the acid will do the rest.

Should key lime pie be green?
Authentic key lime pie is pale yellow, not green — the color comes from egg yolks, not the limes. Bright green pies use food coloring.

Can I make it without condensed milk?
Sweetened condensed milk is essential to the classic texture and tang; there isn’t a reliable substitute that gives the same silky set.
