Sizzling chicken fajitas with peppers and onions in a cast-iron skillet

Few dinners announce themselves like fajitas hitting the table still sizzling. That hiss, that smell of charred peppers and lime — it turns an ordinary Tuesday into an event. And here is the best part: you do not need a restaurant flattop to get it. One screaming-hot cast-iron skillet does the job beautifully.

This easy chicken fajitas skillet keeps the ingredient list short and the technique even shorter. Chicken strips get a quick 10-minute marinade in fajita seasoning, lime, and garlic, then sear hard for real browning. The peppers and onions go in the same pan, picking up all those browned bits, and 35 minutes after you started, you are wrapping everything in warm tortillas. If you are building a weeknight Tex-Mex rotation, these belong right next to my easy sloppy joes — different cuisine, same 35-minute promise. And for the days you want the sizzle without the stove, my crispy air fryer chicken tenders scratch a similar crispy-chicken itch.

The two rules that matter: do not crowd the pan (cook the chicken in batches so it sears instead of steams), and keep the vegetables a little crisp. Mushy fajita peppers are a tragedy. Here is the full play-by-play.

Why You’ll Love This Recipe

  • 35 minutes, one pan: Minimal prep, minimal cleanup, maximum sizzle. This is weeknight cooking at its best.
  • Real char, no grill: A properly heated cast-iron skillet gives you those restaurant-style caramelized edges indoors.
  • Juicy chicken, guaranteed: Thin, even strips and a fast, hot sear mean the chicken hits 165°F (74°C) while staying tender.
  • Endlessly riffable: Swap in shrimp, steak, or portobello mushrooms; change the seasoning; load up whatever toppings you love.
  • Great for a crowd: Double the recipe, serve everything sizzling from the skillet, and let everyone build their own.

Ingredients

For the fajitas

  • 1.5 lb (680 g) boneless, skinless chicken breasts, sliced into 1/2-inch strips
  • 2 bell peppers (1 red, 1 green), sliced into strips
  • 1 large red onion (about 200 g), sliced into half-moons
  • 2 tablespoons (30 ml) vegetable oil, divided
  • 2 tablespoons (16 g) fajita seasoning (store-bought or homemade)
  • 1 teaspoon (6 g) kosher salt, plus more to taste
  • Juice of 1 lime (about 2 tablespoons / 30 ml)
  • 2 cloves garlic (10 g), minced

For serving

  • 8 small flour tortillas, warmed
  • Chopped cilantro, sour cream, and guacamole
  • Extra lime wedges

Everything you need for skillet chicken fajitas.

Instructions

  1. Pat the chicken strips dry with paper towels — this is what lets them brown instead of steam. Toss them in a bowl with 1 tablespoon of the oil, the fajita seasoning, salt, lime juice, and minced garlic. Let it sit for 10 minutes at room temperature while you slice the peppers and onion. Even this short marinade makes a noticeable difference.
  2. Heat a large cast-iron skillet over high heat until it is genuinely smoking — give it a good 3 to 4 minutes. Add the chicken in a single layer without crowding (two batches for 1.5 lb is about right). Sear 3 to 4 minutes per side without moving it much, until deeply browned and the thickest strip reads 165°F (74°C). Transfer to a plate; do not worry if it is not saucy — the fond left in the pan is flavor gold.
  3. Add the remaining tablespoon of oil to the same screaming-hot skillet. Toss in the peppers and onion with a pinch of salt and cook 5 to 6 minutes, stirring only occasionally. You want them softened with real char at the edges but still a little crisp in the middle — not a limp pile.
  4. Return the chicken (and any juices on the plate) to the skillet and toss everything together for about 1 minute, just to rewarm and let the flavors marry. Hit it with another squeeze of lime juice.
  5. Serve immediately, sizzling, straight from the skillet if you are feeling dramatic. Pile into warm flour tortillas with cilantro, sour cream, guacamole, and extra lime.

Tips & Variations

  • Slice against the grain: Look at the lines in the chicken breast and cut across them into 1/2-inch strips. Even pieces cook evenly and stay tender.
  • Homemade fajita seasoning: Mix 2 teaspoons chili powder, 1 teaspoon each cumin, smoked paprika, and garlic powder, plus 1/2 teaspoon each oregano and onion powder. Makes exactly 2 tablespoons.
  • Do not skip the rest-free sear: Letting the chicken sit undisturbed is what builds the crust. Constant stirring gives you gray, steamed chicken.
  • Steak or shrimp swap: Flank steak strips need 2 to 3 minutes per side; shrimp need just 1 to 2 minutes per side. Season and cook the same way.
  • Sheet-pan version: Toss everything with oil and seasoning on a sheet pan and roast at 425°F (220°C) for 15 to 18 minutes, stirring once. Less char, even less effort.

Storage

Refrigerate leftovers in an airtight container for up to 4 days. Reheat in a hot skillet for 3 to 4 minutes to revive the char — the microwave works but softens the peppers. Leftover fajita filling is fantastic over rice, in quesadillas, or on a salad the next day.

FAQ

What is the difference between fajita and taco seasoning?

They overlap a lot, but fajita seasoning is typically milder and more focused on cumin, chili powder, and garlic, while taco seasoning often includes more oregano and onion powder plus a thickener. Either works here in a pinch.

Can I use chicken thighs instead of breasts?

Yes — thighs are more forgiving and stay juicier. Use boneless, skinless thighs, slice them into strips, and cook to 165°F (74°C) the same way. They may need an extra minute per side.

Why is my chicken rubbery?

Rubbery chicken usually means it was overcrowded (so it steamed) or overcooked. Sear in batches, keep the heat high, and pull the strips as soon as they hit 165°F (74°C).

How do I keep the tortillas warm for serving?

Wrap the warmed tortillas in a clean kitchen towel or foil while you finish cooking. For a crowd, keep them in a 200°F (95°C) oven until serving time.
