Pork tenderloin might be the most underrated cut in the entire meat case. It is lean, affordable, cooks in under 45 minutes, and when it is treated right, it rivals anything coming off a steakhouse grill. This garlic herb pork tenderloin is my go-to whenever I want a dinner that feels special without the price tag or the fuss.

The trick is a two-step method: a garlicky Dijon-herb paste that goes on first, then a hard sear followed by a roast at 425°F (220°C). The sear builds that gorgeous golden crust, and the oven finish brings the center to a juicy 145°F (63°C) with just a whisper of blush pink. If you have ever struggled with dry, gray pork, this recipe will change your mind completely. For another weeknight hero with a similar sear-then-finish method, try my creamy garlic Tuscan chicken — same technique, totally different flavor. And if you are building a lineup of reliable mains for a dinner party, this tenderloin sits beautifully next to heartier classics like lasagna.

What I love most is how forgiving it is. The paste does all the heavy lifting flavor-wise, the thermometer does the rest, and the 10-minute rest at the end guarantees every slice stays juicy. Keep reading for the exact temps, the resting trick that matters most, and a few easy variations.

Why You’ll Love This Recipe

  • Ready in 45 minutes: From fridge to table in under an hour, which makes it as realistic for a Tuesday as it is for a Saturday dinner party.
  • Juicy, never dry: The sear-then-roast method plus a real thermometer target of 145°F (63°C) means tender, blush-pink pork every single time — no guessing.
  • Pantry-friendly ingredients: Garlic, rosemary, thyme, Dijon, olive oil. Nothing exotic, nothing you have to hunt down at a specialty store.
  • Feeds a crowd on a budget: One tenderloin generously serves four, and it often costs less than a single steakhouse ribeye.
  • Endlessly adaptable: Swap the herbs, add chili flakes for heat, or brush on a little honey during the last minutes for a sweet-savory glaze.

Ingredients

For the pork

  • 1 pork tenderloin (about 1.5 lb / 680 g), silver skin trimmed
  • 1 tablespoon (15 ml) olive oil, for searing

For the garlic-herb paste

  • 4 cloves garlic (about 20 g), minced
  • 2 tablespoons (8 g) fresh rosemary, finely chopped
  • 1 tablespoon (3 g) fresh thyme leaves
  • 2 tablespoons (30 g) Dijon mustard
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (6 g) kosher salt
  • 1 teaspoon (2 g) freshly cracked black pepper
  • 1 tablespoon (12 g) brown sugar (optional, for a deeper crust)

Everything you need for garlic herb pork tenderloin.

Instructions

  1. Preheat the oven to 425°F (220°C). Pat the pork tenderloin completely dry with paper towels and use a sharp paring knife to trim away the silvery membrane (silver skin) — it does not render and it will make the meat curl and chew tough. Seasoning sticks best to a dry surface, so do not skip this.
  2. Make the paste: in a small bowl, stir the minced garlic, rosemary, thyme, Dijon, 2 tablespoons of olive oil, salt, pepper, and brown sugar (if using) into a thick, spreadable paste. The Dijon is doing quiet work here — it helps the crust brown and adds a tangy backbone under all that garlic.
  3. Rub the paste all over the tenderloin, covering every side, and let it sit at room temperature for about 15 minutes while the oven heats. This short rest lets the salt start seasoning the meat and takes the chill off, so it cooks more evenly.
  4. Heat the remaining tablespoon of olive oil in a large oven-safe skillet over medium-high heat until it shimmers. Sear the tenderloin 2 to 3 minutes per side, turning with tongs, until deeply golden all over. Do not rush this — that browned crust is where most of the flavor lives.
  5. Transfer the whole skillet to the oven and roast 18 to 22 minutes. Start checking early: you want an instant-read thermometer in the thickest part to read 145°F (63°C). Pull it at 140°F (60°C) if your oven runs hot — carryover heat will finish the job.
  6. Move the tenderloin to a cutting board, tent loosely with foil, and rest for a full 10 minutes. This lets the juices redistribute instead of running out onto the board. Slice into 1/2-inch (1 cm) medallions, spoon the pan juices over the top, and serve.

Tips & Variations

  • Trust the thermometer, not the clock: Tenderloins vary in thickness, so 145°F (63°C) is the only reliable doneness signal. A cheap instant-read thermometer is the single best upgrade for this recipe.
  • Do not overcook past 150°F (65°C): Pork is lean, and every degree past 145°F (63°C) costs you juiciness. Remember carryover cooking adds 3 to 5 degrees while it rests.
  • Herb swaps: No fresh rosemary? Use sage or oregano. Dried herbs work in a pinch — use one-third the amount.
  • Honey-garlic glaze: Brush 2 tablespoons of honey over the tenderloin during the last 5 minutes of roasting for a sticky, caramelized finish.
  • Make it ahead: Rub the paste on up to 24 hours in advance, wrap tightly, and refrigerate. Bring to room temperature 20 minutes before searing.

Storage

Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently — slice the pork first, then warm it in a covered skillet with a splash of broth over low heat so it does not dry out. Cooked tenderloin also freezes well for up to 3 months; thaw overnight in the fridge before reheating. Leftover slices are fantastic cold in sandwiches with mustard and arugula.

FAQ

What internal temperature should pork tenderloin be?

The USDA-safe target is 145°F (63°C) followed by a 3-minute rest — in practice, resting 10 minutes tented in foil is even better. At this temperature the center will have a slight blush of pink, which is exactly what you want for juicy pork.

Can I use pork loin instead of tenderloin?

They are different cuts. Pork loin is thicker and leaner, so it needs lower heat and longer cooking. This recipe is written for tenderloin; a loin would need roughly 20 to 25 minutes per pound at 375°F (190°C).

Why did my pork turn out tough?

Almost always overcooking. Even 10 degrees past 145°F (63°C) makes a noticeable difference with this lean cut. Searing too long before roasting can also push it over — keep the sear to 2 to 3 minutes per side.

Can I make this on the grill?

Yes. Sear over direct high heat, then move to indirect heat with the lid closed until it hits 145°F (63°C), about 15 to 20 minutes depending on thickness.
