There is a special kind of quiet that falls over a kitchen when a pan of sticky buns comes out of the oven. Nobody is arguing, nobody is checking a phone — everyone is just drawn in by that buttery, cinnamon-caramel smell. These caramel pecan sticky buns are my go-to when I want a baking project that feels like an event but doesn’t require a pastry degree.

The secret is in the pan, not the bun. While classic cinnamon rolls get frosted on top, sticky buns are baked upside down: you pour a quick brown-sugar caramel into the bottom of the pan, scatter toasted pecans over it, and set the rolls on top. When you flip the whole thing out after baking, every bun gets lacquered in glossy, drippy caramel. No frosting, no fuss — the glaze bakes itself.

I’ve tested this recipe more times than I can count, including one memorable overnight-rise version the morning of my daughter’s birthday, and I can promise you two things: the dough is forgiving, and warm sticky buns have never once survived more than a day in my house. If you love cozy weekend bakes, they sit beautifully alongside my banana bread and a stack of fluffy blueberry buttermilk pancakes for a full brunch spread.

Why You’ll Love This Recipe

  • Self-glazing magic: the caramel bakes right into the buns — no frosting to make or spread.
  • Buttery, pillowy dough: enriched with milk, butter, and egg for a soft, tear-apart crumb.
  • Make-ahead friendly: shape the buns the night before and bake fresh in the morning.
  • Crowd-pleaser: twelve big buns from one 9×13 pan — built for sharing (or not).
  • Real pantry ingredients: nothing fancy, just flour, sugar, butter, pecans, and cinnamon.

Ingredients

For the Dough

  • 1 cup (240 ml) warm milk, about 110°F (43°C)
  • 2 1/4 teaspoons (7 g) active dry yeast (one packet)
  • 1/2 cup (100 g) granulated sugar
  • 1/3 cup (75 g) unsalted butter, melted and slightly cooled
  • 1 large egg plus 1 egg yolk, at room temperature
  • 4 cups (500 g) all-purpose flour
  • 1 teaspoon (6 g) fine sea salt

For the Caramel Pecan Topping

  • 3/4 cup (170 g) unsalted butter
  • 1 cup (220 g) packed light brown sugar
  • 1/3 cup (80 ml) heavy cream
  • 1 1/2 cups (170 g) pecans, toasted and roughly chopped
  • 2 teaspoons pure vanilla extract
  • A generous pinch of fine sea salt

For the Cinnamon Filling

  • 1/4 cup (55 g) unsalted butter, softened
  • 3/4 cup (150 g) packed brown sugar
  • 2 tablespoons ground cinnamon

Everything you need for caramel pecan sticky buns: flour, butter, brown sugar, pecans, cinnamon, milk, and eggs.

Instructions

  1. Wake up the yeast. Stir the warm milk, yeast, and a pinch of the sugar together in a large bowl or stand mixer. Let it stand 5 to 10 minutes until foamy — if it doesn’t foam, your yeast is dead and it’s worth starting over.
  2. Make the dough. Whisk in the remaining sugar, melted butter, egg, and yolk. Add the flour and salt and mix until a shaggy dough forms. Knead 8 to 10 minutes (dough hook on medium, or by hand) until smooth, elastic, and tacky but not sticky. It should pass the windowpane test: stretch a small piece thin enough to see light through without tearing.
  3. First rise. Shape into a ball, place in a greased bowl, cover, and let rise in a warm, draft-free spot for 1 to 1 1/2 hours, until doubled in size.
  4. Make the caramel. Meanwhile, melt the butter with the brown sugar and cream in a medium saucepan over medium heat, stirring constantly. When it reaches a full, rolling boil, boil for exactly 1 minute, then remove from the heat and stir in the vanilla and salt. It should be thick, glossy, and smell like heaven.
  5. Prep the pan. Butter a 9×13-inch baking pan generously. Pour the hot caramel in and spread it evenly, then scatter the chopped pecans over the top.

  1. Roll and fill. On a lightly floured surface, roll the risen dough into a 16×12-inch rectangle. Spread the softened butter all the way to the edges, then sprinkle evenly with the brown sugar and cinnamon.
  2. Shape the buns. Roll up tightly from the long side and pinch the seam shut. Cut into 12 equal slices — unflavored dental floss slid under and crossed over the top gives the cleanest cuts, but a sharp serrated knife works too.
  3. Second rise. Arrange the slices cut-side down over the caramel in the pan, leaving a little breathing room between them. Cover loosely and let rise 45 to 60 minutes, until puffy and touching.
  4. Bake. Heat the oven to 350°F (175°C). Bake 30 to 35 minutes, until deeply golden on top and the caramel is bubbling up around the edges. If they brown too fast, tent loosely with foil for the last 10 minutes.
  5. Flip and serve. Let the pan rest exactly 5 minutes — any longer and the caramel sets and sticks — then invert onto a rimmed baking sheet or large platter. Scrape any leftover caramel and pecans from the pan over the buns. Serve warm.

Tips and Variations

  • Overnight option: after arranging the sliced buns in the pan, cover tightly and refrigerate up to 12 hours. In the morning, let them sit at room temperature 30 to 45 minutes while the oven preheats, then bake as directed.
  • Toast the pecans: 8 minutes at 350°F (175°C) makes a dramatic difference — raw pecans taste flat in comparison.
  • Don’t skimp on the caramel boil: that full 1-minute boil is what thickens it enough to cling to the buns instead of running everywhere.
  • Nut swaps: walnuts or hazelnuts work beautifully; leave the nuts out entirely if there’s an allergy and add an extra 2 tablespoons of cream.
  • Add a little heat: a pinch of cayenne in the cinnamon filling gives the buns a subtle, warming kick that pairs wonderfully with the caramel.

These buns earned a permanent spot in my rotation after I served them at a cookie-swap brunch — someone literally traded their crumbl-style cookies for the recipe card. They’re that good.

Storage

Sticky buns are best the day they’re baked, eaten warm from the pan. Store leftovers in an airtight container at room temperature for up to 2 days — reheat individual buns in the microwave for 20 seconds or in a 300°F (150°C) oven for 8 minutes to re-melt the caramel. They also freeze well: wrap tightly in plastic, then foil, for up to 2 months, and thaw overnight in the fridge before reheating.

FAQ

What’s the difference between sticky buns and cinnamon rolls?

Sticky buns are baked upside down over a layer of caramel (usually with nuts) and flipped out of the pan, so the glaze is baked on. Cinnamon rolls are baked plain and frosted after. Sticky buns = caramel bottom; cinnamon rolls = frosting top.

Can I use instant yeast instead of active dry?

Yes — use the same amount of instant yeast and skip the proofing step; just mix it directly into the flour. The rise times stay about the same.

Why did my caramel stick to the pan?

Almost always because the pan rested too long before flipping. Five minutes is the sweet spot: long enough for the caramel to thicken slightly, short enough that it’s still fluid. If it sticks, warm the pan over low heat for a minute to loosen it.

Can I make these dairy-free?

You can swap in vegan butter sticks and oat milk (1:1), though the caramel won’t be quite as rich. Use full-fat canned coconut milk instead of the heavy cream for the best result.

Soft yeasted dough swirled with cinnamon-brown sugar, baked upside down in homemade brown-sugar caramel with toasted pecans. Best served warm, ideally with strong coffee and zero plans.

There’s something deeply satisfying about flipping that pan and watching the caramel cascade over the buns — it’s the kind of small kitchen drama that makes baking so much fun. Make these once, and I promise you’ll be asked to make them again.
