Classic Strawberry Shortcake

Every year there’s a small window when strawberries taste designed for this dessert — ruby-red through, sweet enough to eat over the sink, so juicy they practically macerate themselves. When those berries show up, I drop everything and make classic strawberry shortcake.

This is the old-fashioned version: tender, buttery biscuits with crisp, sugary tops, split open while still warm and layered with glistening macerated strawberries and real whipped cream. Not pound cake, not sponge cake — actual shortcake, with a crumb that’s rich and flaky and sturdy enough to soak up all that berry syrup without collapsing into mush.

The whole thing comes together in about an hour — mostly hands-off while the berries macerate. It feeds a crowd and tastes like the very best part of summer.

Why You’ll Love This Recipe

Strawberry shortcake is one of those desserts that sounds almost too simple to be special — until you taste one made properly. Here’s what makes this version worth your time:

  • Real biscuits, not cake. The shortcakes are buttery and flaky with golden, sugar-crusted tops — the perfect contrast to soft berries and cream.
  • Syrupy, jammy berries. A 30-minute rest with sugar and lemon turns ordinary strawberries into a glossy, intensely flavored sauce.
  • Fresh whipped cream. Lightly sweetened and softly whipped, it melts into the warm biscuits in the best possible way.
  • Made for entertaining. The components can be prepped ahead and assembled in minutes, so you spend the party eating dessert instead of making it.

Ingredients

For the Buttermilk Biscuits

  • 2 cups (250g) all-purpose flour — spooned and leveled for accuracy.
  • 1/4 cup (50g) granulated sugar, plus a little extra for sprinkling on top.
  • 1 tablespoon baking powder — check that it’s fresh for maximum lift.
  • 1/2 teaspoon baking soda.
  • 1/2 teaspoon fine salt.
  • 1/2 cup (113g) cold unsalted butter, cut into small cubes — keep it refrigerator-cold until the last moment.
  • 3/4 cup (180ml) cold buttermilk.
  • 1 teaspoon vanilla extract.

For the Macerated Strawberries

  • 2 lbs (900g) fresh strawberries, hulled and quartered.
  • 1/3 cup (67g) granulated sugar — adjust to the sweetness of your berries.
  • 1 tablespoon fresh lemon juice.
  • 1 teaspoon lemon zest — it brightens the whole bowl.

For the Whipped Cream

  • 1 1/2 cups (360ml) heavy cream, well chilled.
  • 3 tablespoons (24g) powdered sugar.
  • 1 teaspoon vanilla extract.

Instructions

  1. Macerate the strawberries. Combine the quartered strawberries, sugar, lemon juice, and lemon zest in a large bowl and toss well. Cover and refrigerate for at least 30 minutes (up to 4 hours), stirring once or twice, until the berries release their juices and turn glossy and syrupy.
  2. Heat the oven. Position a rack in the center and preheat to 425°F (220°C). Line a baking sheet with parchment paper.
  3. Mix the dry ingredients. Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl.
  4. Cut in the butter. Add the cold butter cubes and work them in with a pastry blender, two knives, or your fingertips until the mixture looks like coarse crumbs with some pea-sized pieces of butter still visible. Those butter pockets are what make the biscuits flaky.
  5. Bring the dough together. Stir the vanilla into the cold buttermilk, then pour it over the flour mixture. Stir with a fork just until a shaggy dough forms and no dry flour remains. It will look rough — that’s exactly right. Overworking it is the enemy of tenderness.
  6. Cut the biscuits. Turn the dough onto a lightly floured counter, gently pat it into a 3/4-inch-thick round, and cut out biscuits with a 2 1/2-inch round cutter, pressing straight down without twisting. Gather the scraps, re-pat once, and cut the rest. You should get 8 biscuits.
  7. Bake. Arrange the biscuits on the prepared sheet about 2 inches apart. Brush the tops with a little buttermilk or cream and sprinkle generously with coarse or granulated sugar. Bake 14 to 16 minutes, until tall, puffed, and deeply golden on top.
  8. Whip the cream. While the biscuits bake, beat the cold heavy cream, powdered sugar, and vanilla with an electric mixer to soft, billowy peaks. Don’t take it to stiff peaks — you want it soft and luscious. Keep chilled.
  9. Assemble and serve. Split each warm biscuit in half horizontally. Spoon a generous amount of strawberries and their syrup over the bottom half, add a big dollop of whipped cream, set the top half in place at a jaunty angle, and finish with more berries, more syrup, and more cream. Serve immediately while the biscuits are still warm.

Tips for Success

  • Keep everything cold. Cold butter, cold buttermilk, cold bowl — cold ingredients make tall, flaky biscuits and fast-whipping cream.
  • Don’t twist the cutter. Pressing straight down keeps the biscuit edges clean so they rise evenly instead of leaning.
  • Taste your berries first. Early-season berries may need the full 1/3 cup of sugar; peak-season ones might need barely any. Adjust to what you’re working with.
  • Under-whip the cream slightly. It firms up a touch as it sits, and soft peaks fold into the warm biscuits more beautifully than stiff ones.
  • Serve warm. The warm biscuit, cool berries, and cold cream contrast is the whole magic. Refresh cooled biscuits 5 minutes in a 350°F (175°C) oven.

Variations

  • Mixed berry shortcake: Swap half the strawberries for blueberries, raspberries, or blackberries for a jewel-toned version.
  • Peach shortcake: In late summer, replace the strawberries with ripe peaches tossed with a tablespoon of brown sugar and a pinch of cinnamon.
  • Cream cheese whipped cream: Beat 4 oz (113g) softened cream cheese with the powdered sugar before adding the cream — tangy, rich, and incredible.

Storage and Make-Ahead

Strawberry shortcake is at its absolute best assembled fresh, but the components are very make-ahead friendly. The biscuits keep well in an airtight container at room temperature for up to 2 days — refresh them in a 350°F (175°C) oven for 5 minutes before serving. The macerated strawberries can be refrigerated in their syrup for up to 3 days, and the whipped cream holds for 24 hours in the fridge (give it a quick whisk before serving).

You can also freeze the unbaked cut biscuits: freeze them solid on the baking sheet, transfer to a freezer bag, and bake straight from frozen at 425°F (220°C), adding 3 to 4 minutes to the bake time. Assembled shortcakes, however, should never be stored — the biscuits go soggy within an hour. Assemble only what you’ll serve.

Frequently Asked Questions

Can I use frozen strawberries?
You can, but fresh is noticeably better here. If you must use frozen, thaw them completely, drain off excess liquid, and macerate as directed — you may need a little extra sugar since frozen berries are often tarter.

What is macerating, exactly?
It’s just tossing fruit with sugar and letting it sit. The sugar draws out the juices, creating a natural syrup. Thirty minutes minimum; a few hours is even better.

Can I make the biscuit dough ahead?
Yes — mix and cut the biscuits, then refrigerate them on the baking sheet (covered) for up to 24 hours before baking. Bake straight from the fridge. You can also freeze them for up to a month.

Why didn’t my biscuits rise?
The usual suspects: old baking powder (it loses power after about 6 months opened), overworked dough, or a twisted cutter sealing the edges. Keep the dough shaggy, the butter cold, and the cutter straight, and you’ll get tall, proud biscuits.
