All the warm spice and crispy edges of shawarma, roasted on one sheet pan. Pile it into warm pita with a punchy garlic sauce and pickles.

Shawarma Flavor, Weeknight Method

Traditional shawarma is built on a vertical spit — layers of marinated meat shaved off as the edges crisp. It’s a beautiful thing, and completely impractical on a Tuesday. This sheet pan version chases the same flavors with equipment everyone has: high heat, a good spice blend, and thinly sliced chicken thighs that crisp at the edges while staying juicy in the middle.

The marinade does the heavy lifting. Yogurt and lemon tenderize the chicken while a generous dose of cumin, paprika, turmeric, and cinnamon builds that unmistakable warm, earthy shawarma character. Give it at least 30 minutes; give it a workday in the fridge and it’s even better. The onions roast right alongside and come out sweet and charred in spots.

Then there’s the garlic sauce — a quick, sharp, creamy blend that I make while the chicken roasts. It’s modeled on toum, the Lebanese garlic sauce, though this weeknight version uses Greek yogurt and a little mayo instead of the traditional egg-white emulsion. Pile everything into warm pita with pickles and something green, and dinner is the opposite of boring.

The natural partner here is a batch of homemade garlic naan if you’d rather wrap the chicken in something chewier than pita. And the spice logic in this recipe is close to my chicken fajitas skillet — another fast, high-heat chicken dinner worth rotating in.

Why You’ll Love This Recipe

  • Big flavor, one pan. The chicken and onions roast together, and the cleanup is a single sheet pan (line it with foil and it’s nearly nothing).
  • Crispy edges included. High heat and spacing the pieces out gives you those crackly, caramelized bits that make shawarma what it is.
  • Flexible serving. Pita wraps, rice bowls, chopped salads — the chicken works in all of them, and leftovers are genuinely excellent.
  • Marinade-friendly. Ten minutes of work in the morning means dinner cooks itself at night.

Ingredients

For the chicken

  • 2 pounds (900 g) boneless, skinless chicken thighs, cut into 1/2-inch strips
  • 1/2 cup (120 g) plain Greek yogurt (whole milk is best)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 4 garlic cloves, grated or minced
  • 2 teaspoons ground cumin
  • 2 teaspoons sweet paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper, or more to taste
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 large red onion, cut into thick wedges through the root

For the garlic sauce

  • 3/4 cup (180 g) plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 3 garlic cloves, grated to a paste
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1 to 2 tablespoons water, to thin

To serve

  • 4 to 6 warm pita breads
  • Shredded romaine or chopped cucumber and tomato
  • Pickles (dill or pickled red onions), sliced
  • Fresh parsley or mint, chopped
  • Lemon wedges

Instructions

  1. Marinate the chicken. In a large bowl, whisk the yogurt, olive oil, lemon juice, garlic, cumin, paprika, turmeric, coriander, cinnamon, cayenne, salt, and pepper. Add the chicken strips and turn them until every piece is coated. Cover and refrigerate for at least 30 minutes and up to 24 hours. (If you’re short on time, 30 minutes at room temperature while the oven heats still gives you plenty of flavor.)
  2. Heat the oven — really heat it. Set a rack in the upper third and preheat to 450°F (230°C). A properly hot oven is non-negotiable for crispy edges. Line a large rimmed sheet pan with foil for easy cleanup, or leave it bare for maximum browning.
  3. Arrange the pan. Lift the chicken out of the marinade, letting the excess drip off, and spread it on the pan in a single layer with the onion wedges tucked between the pieces. Space is flavor here: if the pieces are touching and piled up, they’ll steam. Use two pans rather than one crowded one.
  4. Roast. Roast for 18 to 22 minutes, until the chicken is cooked through (165°F / 74°C at the thickest piece), the edges are browned and crisp in spots, and the onions are soft with charred tips. Halfway through, use tongs to flip the larger pieces so a second side gets color.
  5. Optional broil for char. For closer-to-the-spit edges, switch the oven to broil for the final 2 to 3 minutes, watching closely. The line between charred and burnt at this temperature is about 60 seconds, so don’t walk away.
  6. Make the garlic sauce. While the chicken roasts, whisk the yogurt, mayonnaise, grated garlic, lemon juice, and salt. Thin with water a spoonful at a time until it’s drizzle-able. Taste: it should be assertively garlicky and bright. Let it sit at least 10 minutes — raw garlic mellows and melds as it rests.
  7. Rest and slice. Rest the chicken for 5 minutes, then pile it onto a board and cut any large pieces into bite-size strips. Squeeze a lemon wedge over the top.
  8. Serve. Set out warm pita, the chicken and onions, garlic sauce, greens, tomato and cucumber, and pickles, and let everyone build their own. Extra sauce on the side, always.

Tips for Success

Thighs, not breasts, for this one. Chicken breast dries out at 450°F before it gets good color. Thighs forgive a few extra minutes and stay juicy. If breasts are what you have, cut them slightly thicker (3/4 inch), pull them as soon as they hit 165°F, and know the result will be leaner.

Dry chicken browns better. Before the marinade goes on, pat the chicken dry. And when you move it to the pan, shake off the excess marinade — a thin coating flavors; a puddle steams.

Grate the garlic for the sauce. Chopped garlic leaves harsh, crunchy bits in a raw sauce. Grate it on a microplane or pound it to a paste with the salt, and it melts in smoothly.

Warm the pita properly. Wrap the stack in foil and put it in the oven for the last 5 minutes of roasting, or char each pita for 20 seconds directly over a gas burner flame. Cold, stiff pita will crack and ruin an otherwise perfect wrap.

Variations

  • Rice bowl style: Serve the chicken over turmeric rice or plain basmati with the garlic sauce, chopped salad, and pickles on top. This is my favorite way to eat the leftovers.
  • Lamb or beef: Use boneless lamb shoulder or flank steak cut into strips, with the same marinade. Roast beef strips a few minutes less.
  • Vegetarian pan: Swap the chicken for two cans of drained chickpeas plus thick cauliflower florets. Toss with the marinade (skip the yogurt or keep it — both work) and roast until the edges crisp, 25 to 30 minutes.
  • Spice adjustments: Add 1/2 teaspoon of cardamom for a more perfumed blend, or a teaspoon of sumac over the finished chicken for a lemony tang.
  • Wrap it like a pro: Spread garlic sauce on the pita first, add chicken, pickles, and a few fries if you’re feeling traditional, roll it tight, and toast the wrapped sandwich seam-side down in a dry skillet for 1 to 2 minutes.

Storage and Make-Ahead

Marinade ahead: The chicken can sit in the marinade for up to 24 hours in the refrigerator. Past that, the lemon and yogurt start to make the texture mushy, so don’t stretch it to two days.

Leftovers: Cooked chicken keeps for up to 4 days refrigerated. Reheat it in a hot skillet with a teaspoon of oil to re-crisp the edges — the microwave makes it rubbery and sad. The garlic sauce keeps 4 to 5 days and improves overnight.

Freezing: Freeze the raw chicken in its marinade in a zip-top bag for up to 3 months. Thaw overnight in the fridge and roast as directed. This is an excellent meal-prep move.

Frequently Asked Questions

Can I make this on the grill?
Yes. Thread the marinated strips onto skewers (or use a grill basket) and grill over medium-high heat, turning every few minutes, until charred at the edges and cooked through, about 10 to 12 minutes. The onions can go on skewers too.

My chicken steamed instead of browning. What went wrong?
Almost always crowding or excess marinade. Use a bigger pan or two pans, shake the marinade off, and make sure the oven is fully preheated to 450°F before the pan goes in. A ripping-hot pan matters too — you can preheat the sheet pan in the oven for even better browning.

Is the garlic sauce like toum?
It’s inspired by toum but simpler. Real toum is an emulsion of garlic, oil, lemon, and egg white — intense and fluffy. This yogurt-based version is milder, tangier, and takes three minutes, which is the right trade on a weeknight.

How do I keep leftovers from drying out?
Slice the chicken before storing it in its juices, and reheat it gently in a covered skillet with a splash of water or chicken broth, finishing uncovered for a minute to bring the edges back.
