These are the cookies I start craving the moment the weather turns. They come out of the oven soft and chewy with crackled, sparkly tops, and the spice hits in layers — ginger first, then cinnamon and cloves, with the dark molasses flavor running underneath everything. They’re sturdy enough for a cookie tin and soft enough that they stay good for days, which cannot be said for most cookies. They also happen to make the whole house smell like the holidays while they bake.

The recipe isn’t fussy, but two things matter more than the rest: use the right molasses, and give the dough a rest in the fridge. Molasses varies a lot — the mild, unsulphured kind gives you a deep but mellow flavor, while blackstrap is bitter enough to push the cookies toward medicinal. And the rest firms up the butter so the cookies bake thick and chewy instead of spreading into lacy pancakes.

If spiced cookies are your thing in the fall, my chai snickerdoodles hit a similar warm-spice note with a different, pillowy texture.

Soft, chewy molasses ginger cookies with crackled sugar tops and deep spice flavor. The dough rests for an hour — that wait is the secret.

Why You’ll Love This Recipe

  • Genuinely chewy, not cakey. Melted butter, an extra egg yolk, and a short rest in the fridge give you dense, chewy centers with lightly crisp edges.
  • Big spice flavor. Fresh ground ginger plus a pinch of black pepper wakes up the dried spices. Nobody will call these bland.
  • They keep beautifully. Molasses cookies actually improve on day two as the spices meld. They’re a smart make-ahead bake for the holidays.
  • That crackled top. Rolling the dough balls in coarse sugar before baking gives you the classic sparkle and a little crunch in every bite.

Ingredients

For the cookies

  • 2 1/4 cups (280 g) all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon fine salt
  • Pinch of black pepper (optional, but it sharpens the spice)
  • 3/4 cup (170 g) unsalted butter, melted and slightly cooled
  • 1 cup (200 g) packed dark brown sugar
  • 1 large egg plus 1 egg yolk, at room temperature
  • 1/4 cup (85 g) unsulphured molasses (not blackstrap)
  • 1 teaspoon vanilla extract
  • 1 tablespoon finely grated fresh ginger (optional, for extra bite)

For rolling

  • 1/3 cup coarse sugar (demerara or turbinado) or granulated sugar

Instructions

  1. Mix the dry ingredients. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, salt, and pepper. Whisking distributes the baking soda evenly, which matters — a pocket of it leaves a soapy spot.
  2. Mix the wet ingredients. In a large bowl, whisk the melted butter and brown sugar until combined and glossy, about 30 seconds. Whisk in the egg and yolk, then the molasses, vanilla, and fresh ginger if using. The mixture will look dark and syrupy.
  3. Combine. Add the dry ingredients to the wet and fold with a spatula until no flour streaks remain. The dough will be soft and a little sticky — that’s correct. Avoid overmixing once the flour goes in; a few small lumps are fine and better than tough cookies.
  4. Rest the dough. Cover and refrigerate for at least 1 hour and up to 3 days. This step firms the butter, hydrates the flour, and concentrates the flavor. Skipping it gives you thinner, greasier cookies.
  5. Heat the oven. Preheat to 350°F (175°C). Line two baking sheets with parchment paper. Put the rolling sugar in a small bowl.
  6. Shape. Scoop the dough into balls of about 1 1/2 tablespoons each (a medium cookie scoop makes this easy). Roll each ball between your palms, then roll it in the sugar to coat generously. Place on the sheets about 2 inches apart — they spread.
  7. Bake. Bake one sheet at a time for 10 to 12 minutes. The cookies are done when the tops are crackled and puffed and the edges look set, but the centers still look slightly underdone and shiny. They will deflate a bit and firm up as they cool. Do not wait for them to look fully baked in the oven; that’s how you get hard cookies.
  8. Cool. Let the cookies rest on the hot sheet for 5 minutes, then move them to a rack. The centers finish setting during those 5 minutes, so don’t skip the rest.

Tips for the Chewiest Cookies

  • Slightly underbake them. Chewiness is decided in the last 2 minutes. Pull the tray when the centers still look soft — carryover heat does the rest.
  • The extra yolk is doing real work. It adds fat and emulsifiers without extra liquid, which keeps the texture dense and fudgy rather than cakey.
  • Weigh your flour if you can. Too much flour is the most common reason these turn out dry and puffy. A cup scooped straight from the bag can hold 20% more than it should.
  • Room-temperature eggs blend better. Cold eggs can seize the melted butter into little clumps. Fifteen minutes on the counter fixes it.
  • Bang the pan (optional). For extra crackles and ripples, give the sheet one firm tap on the counter halfway through baking, then finish as directed.

Variations

  • Ginger sandwich cookies. Spread two cookies with a simple cream cheese frosting (4 ounces cream cheese, 2 tablespoons butter, 3/4 cup powdered sugar, splash of vanilla). These are the first to disappear at any gathering.
  • Chocolate-dipped. Dip half of each cooled cookie in melted dark chocolate and let set on parchment. A tiny pinch of flaky salt on the chocolate is a nice finish.
  • Orange ginger. Add 1 teaspoon of orange zest to the dough. Citrus and molasses get along well, and it brightens the whole cookie.
  • Softer spice. If you prefer a gentler cookie for kids, cut the cloves to 1/4 teaspoon and skip the fresh ginger and black pepper.

Storage and Make-Ahead

Store the baked cookies in an airtight container at room temperature for up to 5 days. A slice of plain bread in the container keeps them soft — the cookies steal its moisture. They also freeze well for up to 3 months; thaw at room temperature for an hour.

To bake fresh later, shape the dough balls (without the sugar coating), freeze them solid on a tray, then store in a freezer bag for up to 3 months. Roll in sugar straight from the freezer and add 1 to 2 minutes to the bake time. The raw dough ball method is also how I handle holiday baking: one afternoon of mixing, fresh cookies for weeks. For another freezer-friendly treat that travels well, try these chocolate coconut macaroons alongside them.

Frequently Asked Questions

Why did my cookies spread flat?
Usually the dough was too warm or the butter was too hot when mixed. Melted butter should be liquid but not sizzling. If your kitchen is warm, chill the shaped balls for 15 minutes before baking.

Can I use blackstrap molasses?
You can, but the flavor will be noticeably more bitter and mineral-heavy, and the cookies will be darker. If blackstrap is all you have, swap 2 tablespoons of it for honey to take the edge off.

My cookies came out puffy and cakey. What happened?
Too much flour or too much mixing after the flour went in. Spoon and level the flour (or weigh it), and fold just until the streaks disappear.

Do I have to roll them in sugar?
No, but the sugar is part of the classic look and adds the crackle and crunch. Granulated sugar works if you don’t have coarse sugar; the tops will be a little less sparkly.
