  • 3 large eggs, at room temperature

  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon fine salt
  • 2 teaspoons pure vanilla extract

Instructions

  1. Prepare the crust. Preheat the oven to 425°F (220°C). Fit the pie crust into a 9-inch pie dish, trim any excess dough, and crimp the edges decoratively. Place the dish in the refrigerator to chill while you prepare the filling — a cold crust going into a hot oven sets the flakiest texture.
  2. Mix the dry ingredients. In a large bowl, whisk together the brown sugar, granulated sugar, cinnamon, ginger, nutmeg, cloves, and salt. Whisking the spices with the sugar first guarantees they distribute evenly through the custard with no pockets of spice.
  3. Whisk the wet ingredients. In a separate medium bowl, whisk the eggs until smooth and slightly frothy. Add the pumpkin puree, evaporated milk, and vanilla extract, whisking until completely blended and uniform in color.
  4. Combine. Pour the pumpkin mixture into the bowl with the spiced sugar and whisk until the filling is completely smooth. Give it a final once-over to make sure there are no sugar lumps hiding at the bottom.
  5. Fill and shield. Pour the filling into the chilled pie crust — it should come close to the top of the rim. Cover the crust edges with a pie shield or strips of aluminum foil to prevent over-browning.

  7. Cool completely. Transfer the pie to a wire rack and let it cool for at least 2 hours at room temperature. Do not slice early — the custard needs this time to finish setting. Serve at room temperature or chilled, topped with a cloud of whipped cream.

  • Use pure pumpkin puree, not pumpkin pie filling. Pie filling already contains sugar and spices, and it will throw off the balance of this recipe. Look for cans labeled “100% pumpkin.”
  • Do not overbake. A slight jiggle in the center is exactly what you want. If you bake until the center is fully firm, the pie will be dense and may crack as it cools.
  • Room-temperature eggs matter. Cold eggs can make the custard curdle slightly when they hit the spiced sugar. Set them on the counter 30 minutes before baking.
