Baked Apple Cider Donuts

There is a particular kind of happiness that only exists at an apple orchard in October — crisp air, a cup of hot cider in your hand, and a warm cinnamon-sugar donut that somehow tastes like the whole season. These baked apple cider donuts are my attempt to bottle that feeling and bring it into your kitchen, any day of the year, with no fryer in sight.

The real magic here is the reduced apple cider. Simmering fresh cider down to a concentrated syrup packs an intense apple flavor into every bite that you simply cannot get from adding cider straight to the batter. Combined with warm cinnamon and nutmeg, the result is a soft, cakey donut that tastes like it came straight from the farm stand.

Because these donuts are baked, not fried, they are lighter, less messy, and genuinely easy enough for a weekend morning project. A quick brush of melted butter and a tumble through cinnamon sugar gives you that classic crackly-sweet crust. Fair warning: they are at their absolute best still warm from the oven, so do not be surprised if half the batch vanishes before they hit the plate.

Why you’ll love this recipe

  • Real apple flavor — reducing the cider concentrates it into a punchy, orchard-fresh syrup.
  • No frying needed — baked in a donut pan for a lighter donut with zero hot-oil hassle.
  • Soft and cakey — tender crumb with a buttery cinnamon-sugar crust in every bite.
  • Quick and easy — about 30 minutes from start to warm donuts on the table.
  • Perfect for fall — warm spices and apple make these the ultimate autumn breakfast treat.

Ingredients

For the donuts

  • 1 1/2 cups (360 ml) apple cider, reduced to 1/2 cup (120 ml)
  • 1 1/2 cups (180 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon fine salt
  • 1/2 cup (100 g) granulated sugar
  • 1/3 cup (75 g) unsalted butter, melted
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract

For the cinnamon-sugar coating

  • 1/2 cup (100 g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons (57 g) unsalted butter, melted

Instructions

  1. Reduce the cider. Pour the apple cider into a small saucepan and simmer over medium heat until it has reduced to 1/2 cup (120 ml), about 10 minutes. It will darken and smell incredible. Set aside to cool slightly — this step is the flavor backbone of the whole recipe.
  2. Prep the pan. Preheat the oven to 350°F (175°C). Generously grease a 12-cavity donut pan with butter or nonstick baking spray, getting into every curve so the donuts release cleanly.
  3. Mix the dry ingredients. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  4. Mix the wet ingredients. In a separate medium bowl, whisk the sugar, melted butter, eggs, vanilla, and the warm (not hot) reduced cider until smooth and well blended.
  5. Combine gently. Pour the wet mixture into the dry mixture and fold with a spatula just until no flour streaks remain. The batter will be thick — that is exactly right. Overmixing makes tough donuts.
  6. Pipe into the pan. Transfer the batter to a piping bag or a zip-top bag with one corner snipped off. Pipe into the donut cavities, filling each about three-quarters full. A bag gives you much neater rings than spooning.
  7. Bake. Bake for 10 to 12 minutes, until the donuts spring back when lightly pressed and a toothpick inserted comes out clean. Cool in the pan for 5 minutes, then turn out onto a wire rack.
  8. Coat while warm. Brush each warm donut all over with melted butter, then toss generously in the cinnamon-sugar mixture until fully coated. Serve warm for the full orchard experience.

Tips for success

  • Do not skip the reduction. Unreduced cider is mostly water and dilutes the batter; the concentrated syrup is what makes these taste like real cider donuts.
  • Grease the pan thoroughly. Baked donuts love to stick. A heavy hand with butter or baking spray — especially in the center tubes — saves heartbreak.
  • Pipe, do not spoon. The thick batter is much easier to portion neatly with a piping bag, giving you even, professional-looking rings.
  • Coat while warm. The cinnamon sugar clings best when the donuts are still warm and the butter is freshly brushed. Work in batches straight from the rack.
  • Watch the bake time. These go from perfect to dry quickly. Start checking at 10 minutes — they should spring back to a light touch.

Variations

  • Apple butter glaze: Instead of cinnamon sugar, dip the cooled donuts in a glaze of 1 cup (120 g) powdered sugar whisked with 2 tablespoons apple butter and 1 tablespoon milk.
  • Caramel drizzle: Coat in plain cinnamon sugar, then drizzle with warm caramel sauce for a caramel-apple twist.
  • Maple sugar: Replace the coating sugar with maple sugar for a New England orchard vibe.
  • Mini donuts: Use a mini donut pan and bake 7 to 8 minutes — adorable and perfect for parties.

Storage and make-ahead

Baked apple cider donuts are at their peak the day they are made, ideally within a few hours of baking. If you have leftovers, store them in an airtight container at room temperature for up to 2 days — a quick 10-second warm-up in the microwave revives the coating beautifully.

You can reduce the cider up to 3 days ahead and refrigerate it, which makes the actual baking day even faster. The batter itself is best mixed fresh, since the leaveners start working as soon as the wet and dry ingredients meet. Baked donuts also freeze well for up to 2 months; thaw at room temperature and warm briefly before serving.

Frequently asked questions

Can I make these without a donut pan? Yes — bake the batter in a well-greased muffin tin for 12 to 14 minutes to make “donut muffins,” then butter and coat them the same way.

What kind of apple cider should I use? Fresh, unfiltered apple cider from the refrigerated section gives the best flavor. Avoid hard cider and clear apple juice, which lack the depth needed for the reduction.

Why did my donuts stick to the pan? Almost always under-greasing. Use butter or a baking spray with flour, and make sure every curve and the center tube are coated.

Can I reduce the sugar? You can cut the batter sugar to 1/3 cup (65 g) without structural problems, but the donuts will be less tender and the coating provides most of the sweetness anyway.
