Ingredients

For the pumpkin cakes

  • 1 1/2 cups (180 g) all-purpose flour

  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon fine salt
  • 1 cup (200 g) packed light brown sugar
  • 1/2 cup (120 ml) vegetable oil
  • 1 cup (245 g) pure pumpkin puree
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract

For the cream cheese filling

  • 8 oz (226 g) cream cheese, at room temperature
  • 1/4 cup (57 g) unsalted butter, at room temperature
  • 2 cups (240 g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 pinch fine salt

Instructions

  1. Prep the oven and pans. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper — the cakes release effortlessly from parchment, so do not skip it.
  2. Mix the dry ingredients. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until evenly combined.
  3. Mix the wet ingredients. In a large bowl, whisk the brown sugar and oil until smooth and combined. Whisk in the pumpkin puree, egg, and vanilla until the mixture is uniform and glossy.
  4. Combine. Add the dry ingredients to the wet and fold gently just until no flour streaks remain. The batter will be thick and scoopable, similar to a muffin batter.
  5. Scoop the cakes. Using a cookie scoop or two spoons, drop 2-tablespoon mounds of batter onto the prepared sheets, spacing them 2 inches apart. Smooth the tops slightly with damp fingertips for even, domed cakes.

  8. Assemble. Pair up the cooled cakes by size so each sandwich matches. Pipe or spread about 2 tablespoons of filling onto the flat side of one cake, then gently press its partner on top. Chill the assembled whoopie pies for 30 minutes to set the filling before serving.
