Lemon Drizzle Loaf Cake

Some cakes are impressive; this one is irresistible. A lemon drizzle loaf cake is the kind of humble, unassuming bake that quietly steals the show at every gathering — a tender, buttery crumb infused with fresh lemon, soaked while warm with a tangy syrup that keeps it impossibly moist, and finished with a sweet-tart glaze that crackles just slightly when you slice it.

The double hit of lemon is what makes this recipe special. Lemon zest beaten into the sugar perfumes the entire crumb, while the warm drizzle soaks deep into the cake, creating those beloved pockets of intense citrus flavor. It is bright without being sour, sweet without being cloying — the perfect balance that keeps you reaching for “just one more thin slice.”

This is also a wonderfully forgiving bake. No layers to stack, no frosting to smooth, no piping skills required. One bowl, one pan, and ingredients you probably already have. It is as at home on a Tuesday afternoon tea tray as it is wrapped up as a gift, and it might just become your most-requested loaf.

Ingredients

For the cake

  • 1 3/4 cups (220 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon fine salt
  • 3/4 cup (170 g) unsalted butter, at room temperature
  • 1 cup (200 g) granulated sugar
  • 3 large eggs, at room temperature
  • 2 tablespoons fresh lemon zest (from about 2 large lemons)
  • 1/4 cup (60 ml) fresh lemon juice
  • 1/2 cup (120 g) sour cream, at room temperature
  • 1 teaspoon pure vanilla extract

For the lemon drizzle

  • 1/4 cup (60 ml) fresh lemon juice
  • 1/4 cup (50 g) granulated sugar

For the glaze

  • 1 cup (120 g) powdered sugar, sifted
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon fresh lemon zest, for garnish

Instructions

  1. Prep the pan. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving overhang on the two long sides for easy lifting.
  2. Mix the dry ingredients. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream butter, sugar, and zest. First, rub the lemon zest into the granulated sugar with your fingertips until fragrant — this releases the citrus oils and is a small step with big flavor payoff. Then beat the butter and lemon sugar on medium-high speed until pale and fluffy, about 3 minutes.
  4. Add eggs and wet ingredients. Beat in the eggs one at a time, scraping the bowl after each. Mix in the vanilla, then the sour cream and lemon juice on low speed. The batter may look slightly curdled at this point — that is completely normal and it will come together.
  5. Fold in the flour. Add the dry ingredients and fold gently just until no flour streaks remain. Overmixing here makes a tough, dense loaf, so stop as soon as it comes together.
  6. Bake. Spread the batter evenly in the prepared pan and smooth the top. Bake for 50 to 60 minutes, until deep golden and a toothpick inserted in the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil for the last 15 minutes.
  7. Make the drizzle. While the cake bakes, stir the 1/4 cup lemon juice and 1/4 cup sugar in a small bowl until the sugar mostly dissolves. It does not need heat — the warm cake will do the work.
  8. Soak while warm. As soon as the cake comes out of the oven, poke holes all over the top with a wooden skewer or toothpick, going deep. Slowly spoon the lemon drizzle over the warm cake, letting it soak in. Cool in the pan for 15 minutes, then lift out using the parchment and cool completely on a wire rack.
  9. Glaze and garnish. Whisk the sifted powdered sugar with the 2 tablespoons of lemon juice until you have a thick but pourable glaze. Drizzle it over the cooled cake, letting it drip down the sides, and sprinkle with fresh lemon zest. Let the glaze set for 20 minutes before slicing.

Tips for success

  • Use fresh lemons, always. Bottled juice cannot match the brightness of fresh-squeezed, and you need the zest anyway — buy the real fruit.
  • Rub the zest into the sugar. This classic technique bursts the zest’s oil cells and distributes lemon flavor through the entire crumb.
  • Soak while warm. A warm cake absorbs the drizzle deeply; a cool cake lets it pool on top. Do not wait.
  • Do not overmix. Fold the flour in gently and stop at the first sign of a uniform batter for the tenderest crumb.
  • Cool fully before glazing. Glaze on a warm cake melts into a transparent film instead of setting into that pretty opaque drizzle.

Variations

  • Lemon-blueberry loaf: Fold 1 cup (150 g) of fresh blueberries tossed in 1 tablespoon of flour into the batter.
  • Lemon-poppy seed: Add 2 tablespoons of poppy seeds with the dry ingredients for the classic deli-style version.
  • Meyer lemon: When in season, use Meyer lemons for a sweeter, more floral citrus note.
  • Coconut-lemon: Replace 1/2 cup (40 g) of the flour with desiccated coconut and sprinkle toasted coconut over the glaze.

Storage and make-ahead

Thanks to the syrup soak, this loaf stays moist for days. Store it in an airtight container at room temperature for up to 4 days — the flavor actually deepens and improves by day two. For longer storage, wrap the unglazed loaf tightly in plastic wrap and freeze for up to 3 months; thaw at room temperature and add the glaze fresh.

You can bake the loaf a day ahead of serving with complete confidence. If making ahead for a gift or event, wait to add the glaze until the day you serve it so it looks its glossy best.

Frequently asked questions

Why did my loaf sink in the middle? The most common causes are underbaking, opening the oven door too early, or too much leavening. Make sure the toothpick comes out clean and avoid peeking before the 45-minute mark.

Can I make this in a different pan? An 8×4-inch loaf pan works — add 5 to 10 minutes to the bake time. For muffins, bake 18 to 22 minutes; drizzle and glaze them the same way.
