A perfectly roasted chicken is one of those kitchen milestones — the moment you pull a burnished, crackling-skinned bird from your own oven, you feel like you can cook anything. This lemon herb roast chicken is the recipe that gets you there: a whole chicken rubbed with garlicky herb butter, stuffed with lemon and fresh herbs, and roasted hot until the skin turns deep golden and the meat stays impossibly juicy.

The method is classic for a reason. A hot 425°F (220°C) oven crisps the skin while the herb butter bastes the breast meat from underneath, keeping it moist. Lemon in the cavity perfumes the whole bird from the inside out. And the only real skill involved is using a thermometer — pull the thigh at 165°F (74°C), rest it, and carve. That’s it. No trussing degree required.

Ingredients

For the Chicken

  • 1 whole chicken, 4 to 5 lb (1.8 to 2.3 kg), giblets removed
  • 2 tablespoons (30 ml) olive oil
  • ½ cup (120 ml) low-sodium chicken broth

For the Lemon Herb Butter

  • 6 tablespoons (85 g) unsalted butter, softened to room temperature
  • 4 garlic cloves, minced
  • 2 tablespoons chopped fresh rosemary, plus 2 whole sprigs
  • 2 tablespoons chopped fresh thyme leaves, plus 4 whole sprigs
  • 2 tablespoons chopped fresh parsley
  • 1½ teaspoons (9 g) kosher salt, plus more to taste
  • 1 teaspoon (2 g) freshly ground black pepper

For the Cavity

  • 2 lemons
  • 1 whole head garlic, halved crosswise
  • Kitchen twine, for tying the legs

Instructions

  1. Take the chicken out of the refrigerator 30 to 45 minutes before roasting — a bird that starts at room temperature cooks more evenly. Preheat the oven to 425°F (220°C). Remove the giblets from the cavity (save them for stock if you like), then pat the chicken completely dry inside and out with paper towels. Dry skin is non-negotiable for crispiness.
  2. In a small bowl, mash the softened butter with the minced garlic, chopped rosemary, chopped thyme, parsley, salt, and pepper until it forms a fragrant, evenly green-flecked herb butter. If your butter isn’t soft enough, give it 10 seconds in the microwave — you want it spreadable, not melted.
  3. Slide your fingers gently under the skin over the breast and thighs to loosen it, being careful not to tear it. Push about two-thirds of the herb butter under the skin, massaging it over the surface to spread it evenly. Rub the remaining butter all over the outside of the bird, including the legs and wings.
  4. Halve one of the lemons and stuff the cavity with the lemon halves, the halved garlic head, the rosemary sprigs, and the thyme sprigs. Tie the legs together with kitchen twine and tuck the wing tips under the body so nothing burns. Season the outside with an extra pinch of salt.
  5. Set the chicken breast-side up on a rack inside a roasting pan (a bed of thick onion slices works if you don’t have a rack). Drizzle with the olive oil, squeeze the juice of the second lemon over the top, and pour the chicken broth into the bottom of the pan to keep the drippings from scorching.
  6. Roast for 1 hour 15 minutes to 1 hour 30 minutes, until the skin is deep golden-brown and crisp. The chicken is done when an instant-read thermometer inserted into the thickest part of the thigh (without touching bone) reads 165°F (74°C); the breast should read 160–165°F. If the breast skin browns too quickly before the thighs are done, tent it loosely with foil.
  7. Transfer the chicken to a cutting board and rest for 10 to 15 minutes — this is essential for juicy meat, so don’t skip it. While it rests, skim the fat from the pan drippings and pour the remaining jus into a small pitcher. Carve and serve with the pan juices spooned over.

Tips & Variations

  • Dry the skin obsessively. Crisp skin starts before the oven: pat the bird dry, and for extra credit, leave it uncovered in the fridge for a few hours (or overnight) so the skin air-dries.
  • Trust the thermometer, not the clock. Ovens vary and chickens vary. Thigh at 165°F (74°C) is the only doneness test that matters — juices running clear is a fine backup cue, but temperature is definitive.
  • Don’t skip the rest. Cutting too early lets all the juices run out onto the board. Ten to fifteen minutes of patience pays off in every slice.
  • Switch up the herbs. Sage, oregano, or tarragon all work beautifully in the herb butter. In a pinch, use 2 teaspoons total of dried herbs instead of fresh.
  • Make gravy from the drippings. Whisk a tablespoon of flour into the skimmed drippings in a saucepan, add a cup of chicken broth, and simmer until thickened for a quick pan gravy.

Storage

Refrigerate leftover chicken in an airtight container for up to 4 days — keep the meat on the bone if you can, as it stays moister. Shredded or sliced meat also freezes well for up to 3 months; freeze it with a spoonful of the pan juices to protect it. Reheat gently in a covered dish at 325°F (165°C) with a splash of broth until warmed through. And don’t throw away the carcass: simmer it with vegetables for a rich homemade stock.
