There is a moment, about two hours into the braise, when the whole house smells like a taqueria in the best possible way — sweet orange, warm cumin, garlic melting into pork fat. That is the promise of carnitas: humble pork shoulder transformed by nothing more than time, citrus and heat into something shreddable, juicy and deeply savory.

What makes these tacos truly special is the two-step method. First, the pork braises low and slow until it surrenders completely. Then it gets a blast under the broiler, and those browned, crackly edges are what separate good carnitas from unforgettable carnitas. If you love set-it-and-forget-it dinners, you will also want to try our one-pot lemon herb chicken orzo, and for another crowd-pleasing weeknight win, these crispy air fryer chicken tenders are hard to beat.

This recipe feeds a crowd — about 16 tacos — which makes it perfect for taco night, game day or meal prep. The pork reheats beautifully and actually crisps up even better the second day, so do not be shy about making the full batch.

Why You’ll Love This Recipe

  • Authentic two-step method: A gentle citrus braise followed by a high-heat crisp gives you juicy meat with caramelized, crackly edges — just like the real thing.
  • Feeds a crowd: Four pounds of pork shoulder makes about 16 tacos, perfect for parties, taco bars or a week of leftovers.
  • Mostly hands-off: Fifteen minutes of prep, then the oven does all the work while you get on with your day.
  • Endlessly versatile: Use the carnitas in tacos, burritos, quesadillas, nachos or rice bowls — one batch, many dinners.
  • Freezer friendly: It freezes beautifully for up to 3 months, so future-you gets taco night with almost zero effort.

Ingredients

For the carnitas

  • 4 lb (1.8 kg) boneless pork shoulder (Boston butt), cut into 2 to 3-inch chunks
  • 2 tsp (12 g) kosher salt, plus more to taste
  • 1 tsp (2 g) freshly ground black pepper
  • 1 tsp (2 g) ground cumin
  • 1 tsp (1 g) dried Mexican oregano
  • 6 cloves garlic, smashed
  • 1 large white onion, quartered
  • 2 bay leaves
  • 1 cup (240 ml) fresh orange juice (about 3 oranges)
  • 1/4 cup (60 ml) fresh lime juice (about 2 limes)
  • 1 cup (240 ml) chicken broth or water

For serving

  • 16 small corn tortillas, warmed
  • 1 cup (150 g) diced white onion
  • 1 cup (30 g) chopped fresh cilantro
  • Lime wedges and salsa verde

Everything you need for authentic pork carnitas: pork shoulder, citrus, garlic and warm corn tortillas.

Instructions

  1. Season the pork. Toss the pork chunks with the salt, pepper, cumin and oregano in a large bowl until every piece is evenly coated. Let the meat sit at room temperature for about 15 minutes while you gather the remaining ingredients — this short rest helps the seasoning start to penetrate.
  2. Build the braise. Arrange the seasoned pork in a single snug layer in a large Dutch oven. Nestle the quartered onion, smashed garlic and bay leaves between the pieces, then pour over the orange juice, lime juice and chicken broth. The liquid should come about two-thirds of the way up the meat; it does not need to cover it completely, since the pork will release plenty of its own juices.
  3. Braise low and slow. Cover the pot and slide it into a 325°F (165°C) oven for 2 1/2 hours, turning the pieces once about halfway through. You are looking for meat that offers zero resistance when prodded with a fork — if it still fights back, give it another 20 to 30 minutes.
  4. Shred the pork. Lift the pork out onto a cutting board and discard the onion quarters and bay leaves. Using two forks, shred the meat into rustic bite-size pieces, keeping some larger chunks intact. Those bigger pieces are the ones that will develop the best crispy edges under the broiler, so resist the urge to shred everything into fine strands.
  5. Reduce the braising liquid. Set the Dutch oven over medium-high heat and simmer the braising liquid for 10 to 15 minutes, until it reduces to a dark, syrupy glaze — you should end up with about 1 cup (240 ml). This step concentrates all the citrus and pork flavor, and the sticky glaze is what helps the meat caramelize so beautifully.
  6. Crisp under the broiler. Heat the broiler to high and position a rack 6 to 8 inches from the element. Spread the shredded pork in an even layer on a foil-lined sheet pan and drizzle the reduced glaze all over. Broil for 5 to 7 minutes, then flip the pieces and broil 5 to 7 minutes more, until the edges are deeply golden and crackly in spots. Watch it closely — the line between charred and burnt is thin.
  7. Warm the tortillas. While the pork crisps, warm the corn tortillas in a dry skillet over medium-high heat or directly over a gas flame, about 30 seconds per side, until pliable with a few toasted spots. Stack them in a clean kitchen towel to keep them warm and soft.
  8. Assemble the tacos. Double up the tortillas if you like a sturdier taco, pile on a generous amount of carnitas, and finish with diced onion, a shower of cilantro, a squeeze of lime and a spoonful of salsa verde. Serve immediately, while the edges are still crackling.

The secret to authentic carnitas: shred the tender pork, then broil until the edges turn golden and crisp.

Tips & Variations

  • Slow cooker option: Cook the seasoned pork with the liquids on LOW for 8 hours, then shred, reduce the liquid on the stovetop and crisp under the broiler as directed.
  • For extra authenticity: Traditional carnitas are confited in lard. You can add 1/2 cup (110 g) of lard to the braise for an even richer result.
  • Do not skip the reduction: That syrupy glaze is liquid gold — it carries all the flavor and is the secret to deep caramelization.
  • Make it a bowl: Serve over cilantro-lime rice with black beans, avocado and pickled red onions for an easy carnitas bowl.
  • Spice it up: Add a sliced jalapeño or a teaspoon of chipotle in adobo to the braise for a smoky kick.

Storage

Refrigerate leftover carnitas in an airtight container for up to 4 days, or freeze for up to 3 months. Reheat in a hot skillet with a splash of the reserved juices (or a little oil) so the edges re-crisp — avoid the microwave, which makes them soggy.

FAQ

Can I use a different cut of pork?

Pork shoulder (Boston butt) is ideal because its fat and collagen melt into juicy, shreddable meat. Pork loin or tenderloin are too lean and will turn out dry — stick with shoulder for the best carnitas.

Why is my pork dry?

Two likely culprits: a cut that was too lean, or braising at too high a temperature. Keep the oven at 325°F (165°C), use a well-marbled shoulder, and always toss the shredded meat with the reduced braising liquid before crisping.

Can I make carnitas ahead of time?

Absolutely — they are arguably better the next day. Braise and shred the pork, refrigerate it in its juices, then crisp under the broiler just before serving for maximum crackle.

What should I serve with carnitas tacos?

Keep it classic: warm corn tortillas, diced white onion, cilantro, lime wedges and salsa verde. On the side, Mexican rice, refried beans or a simple cabbage slaw all work beautifully.
