The Cake That Opens Cranberry Season

Fresh cranberries show up in stores in October, sit there ignored for a few weeks, and then suddenly it’s Thanksgiving and everyone wants them at once. I like to get ahead of the rush. This pound cake is my first cranberry bake of the year — a classic, fine-crumbed, butter-heavy cake where the berries do what they do best: cut through richness with little bursts of tartness.

The orange is not a background note here. Zest goes into the batter and gets rubbed into the sugar first, which pulls the oils out and perfumes the whole cake, and then a simple orange glaze goes over the top while the cake is still slightly warm. The result tastes like the holidays without being a fruitcake about it.

It’s a sturdy cake in the best way. It slices cleanly, travels well, and is arguably better on the second day, which makes it a smart bake for gatherings. If you’re building a fall dessert table, it sits happily next to my carrot cake with cream cheese frosting or a plate of vanilla cupcakes with buttercream for the frosting loyalists.

Why You’ll Love This Recipe

  • Classic pound cake texture. Fine, tight crumb; rich without being heavy; slices like a dream. No mixer tricks or unusual ingredients — just proper technique.
  • Tart against sweet. Fresh cranberries keep the cake from being cloying, and the orange glaze doubles down on the brightness.
  • It keeps. Pound cake is famous for improving over a day or two as the crumb settles. Bake it ahead without worry.
  • Berries that stay put. A light flour coating and a thick batter keep the cranberries suspended instead of sunk in a layer at the bottom.

Ingredients

For the cake

  • 1 1/2 cups (190 g) all-purpose flour, plus 1 tablespoon for the cranberries
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 1 cup (226 g) unsalted butter, softened to room temperature
  • 1 1/4 cups (250 g) granulated sugar
  • 1 tablespoon orange zest (from about 2 oranges), plus more for garnish
  • 4 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup (60 ml) fresh orange juice
  • 1/4 cup (60 g) sour cream, at room temperature
  • 1 1/2 cups (150 g) fresh cranberries (frozen works too; see Tips)

For the orange glaze

  • 1 cup (120 g) powdered sugar, sifted
  • 2 to 3 tablespoons fresh orange juice
  • Pinch of salt

Instructions

  1. Prepare the pan and oven. Preheat the oven to 325°F (165°C). Grease a 9×5-inch loaf pan, line it with a parchment sling leaving overhang on the long sides, and grease the parchment. The sling matters — this cake likes to stick.
  2. Mix the dry ingredients. Whisk the flour, baking powder, and salt in a medium bowl. Set aside.
  3. Coat the cranberries. In a small bowl, toss the cranberries with the reserved 1 tablespoon of flour until lightly dusted. This small step, plus a genuinely thick batter, is what keeps them distributed through the loaf.
  4. Rub the zest into the sugar. In the bowl of a stand mixer (or a large bowl), combine the sugar and orange zest. Rub them together with your fingers for about 30 seconds, until the sugar is fragrant and slightly damp. This releases the zest’s oils and spreads orange flavor through every slice.
  5. Cream the butter and sugar. Add the softened butter and beat on medium speed for 3 to 4 minutes, until the mixture is pale, fluffy, and noticeably lighter in color. Don’t rush this — the air beaten in here is most of the cake’s lift.
  6. Add the eggs one at a time. Beat in each egg until fully incorporated before adding the next, scraping the bowl as needed. If the mixture looks a little curdled after an egg, that’s cold eggs — keep going; it will come together when the flour goes in. Beat in the vanilla.
  7. Alternate dry and wet. With the mixer on low, add the flour mixture in three additions, alternating with the orange juice and sour cream (flour, juice, flour, sour cream, flour). Mix only until each addition disappears. Overmixing at this stage develops gluten and toughens the crumb.
  8. Fold in the cranberries. Fold the floured cranberries through the batter with a spatula. The batter will be thick — thick enough to hold a spatula upright for a second. Spread it into the prepared pan and smooth the top.
  9. Bake. Bake for 60 to 70 minutes, until the top is deep golden, a crack runs down the center (that’s traditional and welcome), and a skewer inserted in the center comes out with just a few moist crumbs. If the top browns too quickly in the last 15 minutes, tent it loosely with foil.
  10. Cool properly. Let the cake cool in the pan for 15 minutes, then use the parchment sling to lift it onto a wire rack. Pound cake slices best fully cooled; warm slices crumble.
  11. Glaze. Whisk the powdered sugar, salt, and 2 tablespoons of orange juice until smooth; add more juice a teaspoon at a time until it pours in a thick ribbon. Drizzle over the cooled cake and finish with a little extra zest. Let the glaze set for 20 minutes before slicing with a serrated knife.

Tips for Success

Room temperature is not a suggestion. Butter that’s too cold won’t cream properly, and eggs and sour cream straight from the fridge can make the batter curdle and bake up dense. Set everything out 45 to 60 minutes ahead. In a pinch, eggs warm up in a bowl of lukewarm water in 10 minutes.

Fresh vs. frozen cranberries. Both work. If using frozen, do not thaw them — toss them in the flour coating while still frozen and fold them in at the last second. Thawed berries bleed into the batter and turn it pink-gray. The bake time may stretch by 5 minutes with frozen fruit.

Weigh your flour if you can. Pound cake is unforgiving about flour amounts. Too much flour is the number-one cause of a dry, heavy loaf. Spoon the flour into the measuring cup and level it off if you don’t have a scale.

The crack is fine. A crack along the center of a pound cake is a sign of a good rise in a hot-enough oven, not a failure. The glaze will run into it attractively.

Variations

  • Cranberry orange with a crunch: Add a streusel top before baking — rub together 1/4 cup flour, 2 tablespoons sugar, 2 tablespoons cold butter, and a pinch of cinnamon, and scatter it over the batter.
  • Lemon version: Swap orange zest and juice for lemon. The cranberry-lemon combination is sharper and excellent with tea.
  • White chocolate: Fold in 3/4 cup of white chocolate chips with the cranberries. Reduce the sugar to 1 cup to compensate.
  • Bundt format: Double the recipe for a 10- to 12-cup Bundt pan, grease and flour the pan meticulously, and bake 55 to 65 minutes. The glaze goes on heavier — it’s a bigger cake.
  • Simple and unglazed: Skip the glaze, dust with powdered sugar, and serve slices with lightly sweetened whipped cream. This is the tea-cake presentation.

Storage and Make-Ahead

At room temperature: Wrapped tightly or kept in an airtight container, the cake stays moist for 3 to 4 days. The texture peaks on day two, in my opinion — the crumb firms up and the orange flavor deepens.

In the freezer: This cake freezes extremely well. Wrap the whole loaf (unglazed, ideally) in plastic wrap and then foil, and freeze for up to 3 months. Thaw overnight at room temperature, still wrapped, then glaze. Individual slices freeze well too and thaw in about an hour.

Make ahead for events: Bake the cake up to 2 days before you need it, store it wrapped at room temperature, and glaze it the morning of serving so the glaze looks fresh.

Frequently Asked Questions

Can I use dried cranberries instead of fresh?
You can, but the cake changes character — dried cranberries are sweet, so the tart contrast disappears. If you go that route, soak 1 cup of dried cranberries in hot orange juice for 20 minutes, drain, pat dry, and reduce the sugar to 1 cup.

Why did my cake sink in the middle?
Usually one of three things: the oven door was opened in the first 40 minutes, the cake was underbaked in the center, or there was too much leavening. Check your baking powder’s freshness, and rely on the skewer test rather than the clock.

Can I make this in a different pan?
An 8 1/2×4 1/2-inch loaf pan works with a slightly longer bake (add 5 to 10 minutes). Two mini loaf pans take about 40 to 45 minutes. A muffin tin gives you 12 to 14 cranberry-orange cakes in 22 to 25 minutes.

Do I have to use the glaze?
No. The cake is complete without it. But the glaze adds the freshest orange hit and makes the loaf look finished, so I rarely skip it.
