Carrot Cake with Cream Cheese Frosting

Carrot cake with cream cheese frosting is one of those desserts that inspires fierce loyalty — and for good reason. Beneath that tangy, luscious frosting lies a cake that is deeply moist, warmly spiced, and studded with sweet carrots, crunchy walnuts, and juicy pineapple. It is the rare cake that manages to be both comforting and a little bit virtuous-feeling (there are vegetables in it, after all).

This is my definitive version, honed over many springs and Easters. The crumb stays tender for days thanks to oil instead of butter and a generous amount of finely grated carrot, while crushed pineapple guarantees moisture without making the cake taste fruity. The spice blend is warm but balanced, letting the carrot flavor shine through rather than burying it.

And then there is the frosting: a proper cream cheese frosting, tangy and not too sweet, piled generously between the layers and swirled over the top. It is the only partner carrot cake will ever need. Whether it is Easter, a birthday, or just a weekend that deserves cake, this recipe delivers.

Why you’ll love this recipe

  • Unbelievably moist — oil, pineapple, and fresh carrots keep it tender for days.
  • Perfectly spiced — cinnamon, nutmeg, and ginger in just the right balance.
  • Loaded with texture — crunchy walnuts and plump raisins in every bite.
  • Tangy cream cheese frosting — the classic pairing, silky and not too sweet.
  • Great make-ahead cake — the flavor improves overnight in the fridge.

Ingredients

For the carrot cake

  • 2 cups (250 g) all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon fine sea salt
  • 1 1/4 cups (250 g) granulated sugar
  • 3/4 cup (150 g) packed light brown sugar
  • 1 cup (240 ml) vegetable oil
  • 4 large eggs, room temperature
  • 2 teaspoons (10 ml) pure vanilla extract
  • 3 cups (330 g) finely grated carrots (about 5 medium)
  • 1 cup (120 g) chopped walnuts, plus more for decorating
  • 1 can (8 ounces / 225 g) crushed pineapple, well drained
  • 1/2 cup (75 g) raisins (optional)

For the cream cheese frosting

  • 8 ounces (225 g) cream cheese, softened
  • 1/2 cup (115 g) unsalted butter, softened
  • 3 1/2 cups (420 g) powdered sugar
  • 1 teaspoon (5 ml) pure vanilla extract
  • Pinch of fine sea salt

Instructions

  1. Prep the pans and oven. Preheat the oven to 350°F (175°C). Grease two 9-inch (23 cm) round cake pans, line the bottoms with parchment paper rounds, and lightly grease the parchment. This triple insurance means the cakes will release perfectly.
  2. Whisk the dry ingredients. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt until evenly combined.
  3. Mix the wet ingredients. In a second large bowl, whisk the granulated sugar, brown sugar, oil, eggs, and vanilla until smooth, glossy, and well emulsified, about 1 minute.
  4. Combine and fold in the good stuff. Pour the dry ingredients into the wet and stir with a spatula just until no flour streaks remain — a few lumps are fine. Fold in the grated carrots, walnuts, drained pineapple, and raisins (if using) until evenly distributed.
  5. Bake. Divide the batter evenly between the prepared pans and smooth the tops. Bake for 30 to 35 minutes, until the tops spring back when lightly pressed and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  6. Cool completely. Let the layers cool in their pans for 15 minutes, then run a knife around the edges and turn them out onto a wire rack. Cool fully — at least 1 hour — before frosting, or the frosting will slide right off.
  7. Make the frosting. Beat the softened cream cheese and butter on medium speed for about 2 minutes until completely smooth and creamy. With the mixer on low, gradually add the powdered sugar, then beat in the vanilla and salt. Increase to medium-high and beat 1 to 2 minutes more until light and fluffy.
  8. Assemble. If the layers domed, trim them level with a serrated knife. Place one layer on a serving plate, spread about 1 cup of frosting evenly over it, and top with the second layer. Frost the top and sides with the remaining frosting, creating swoops with the back of a spoon, and press chopped walnuts around the base or over the top.

Tips for success

  • Grate the carrots finely — and yourself. Pre-shredded carrots are too thick and dry; freshly grated carrots melt into the crumb and release moisture. Use the small holes of a box grater.
  • Drain the pineapple well. Press it in a fine-mesh sieve to remove excess juice, or the batter gets too wet.
  • Don’t overmix. Stir just until the flour disappears — overmixing makes a dense, tough cake.
  • Cool before frosting. Even slightly warm layers will melt cream cheese frosting into a glaze. Patience pays.
  • Weigh or spoon-and-level the flour. Too much flour is the number one cause of dry cake; fluff it up, spoon it in, and level it off.

Variations

  • Sheet cake version: bake in a 9×13-inch (23×33 cm) pan for 35 to 40 minutes; frost right in the pan for easy serving.
  • Carrot cake cupcakes: fill lined muffin cups two-thirds full and bake 18 to 22 minutes; makes about 24.
  • Coconut carrot cake: add 1 cup (80 g) of sweetened shredded coconut to the batter and sprinkle toasted coconut on top.
  • Spice it up: add 1/4 teaspoon of ground cloves or a pinch of black pepper for extra warmth.
  • Nut-free: omit the walnuts entirely or replace with an extra 1/2 cup of raisins.

Storage and make-ahead

Thanks to the cream cheese frosting, this cake should be refrigerated. It keeps beautifully in an airtight container (or under a cake dome) in the refrigerator for up to 5 days — and honestly, the flavor and texture are even better on day two as the spices meld. Let slices sit at room temperature for 20 to 30 minutes before serving for the best texture.

The unfrosted layers freeze wonderfully: wrap each tightly in plastic wrap plus foil and freeze for up to 2 months. Thaw overnight in the refrigerator, then frost fresh. You can also bake the layers a day ahead and refrigerate them wrapped until assembly time.

Frequently asked questions

Can I taste the pineapple?
No — it dissolves into the batter and simply makes the cake extra moist. Most people never identify it; they just notice how tender the crumb is.

Why did my cake sink in the middle?
The usual suspects are underbaking or opening the oven door too early. Make sure the toothpick test is truly clean before removing the pans.

Can I reduce the sugar?
You can cut the granulated sugar to 1 cup without major texture changes, but sugar does more than sweeten — it keeps the crumb tender — so don’t go below that.

Do I have to use walnuts?
Not at all. Pecans are a lovely swap, or leave the nuts out entirely for a nut-free cake.
