Fresh apple cider simmered with cinnamon, cloves, star anise, and orange. The easiest way to make your whole house smell like November.

The Smell Alone Is Worth It

Every November there comes an evening — first cold snap, dark by six — when I put a pot of cider on the stove less for drinking than for what it does to the house. Within fifteen minutes the whole place smells like cinnamon and orange and cloves, and everybody drifts into the kitchen asking what’s cooking. Then, of course, we drink it too, usually standing around the stove with the first mugs while the pot keeps warm for refills.

This is a simple recipe, but a couple of choices separate a great mug from a forgettable one. Start with real fresh cider — the cloudy, unfiltered kind sold in jugs in the produce section, not clear apple juice. Simmer the spices rather than boiling, because a hard boil makes the cider taste cooked and dulls the spices. And add the citrus as peel and slices rather than juice alone, so you get brightness without turning the pot into orange juice.

It scales effortlessly for a crowd, holds on the stove or in a slow cooker for hours, and the leftovers reheat all week. If you’re putting together a fall baking day to go with it, these chai snickerdoodles share the same warm-spice soul, and a spiced pear galette next to a mug of this cider is about as November as it gets.

Why You’ll Love This Recipe

  • Five minutes of real work. Slice an orange, measure some spices, and the stove does the rest.
  • Whole spices, clean flavor. Simmering whole cinnamon, cloves, and star anise gives you warmth without the gritty sludge ground spices leave behind.
  • Made for gatherings. The pot stays warm for hours and guests serve themselves. Double it in a slow cooker and forget about it entirely.
  • A base, not a cage. Caramel sauce, fresh ginger, a splash of bourbon for the adults — the variations below make it yours.

Ingredients

  • 8 cups (1.9 L) fresh apple cider (unfiltered, unsweetened)
  • 3 cinnamon sticks (about 3 inches each)
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice berries
  • 2 whole star anise pods
  • 1 orange, scrubbed, half sliced into rounds and half peeled in wide strips (peel only, no white pith)
  • 1 tablespoon maple syrup or brown sugar, plus more to taste (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt

For serving (optional)

  • Extra cinnamon sticks as stirrers
  • Thin apple slices or orange rounds
  • Whipped cream and a drizzle of caramel sauce

Instructions

  1. Combine everything in the pot. Pour the cider into a large pot or Dutch oven. Add the cinnamon sticks, cloves, allspice, star anise, orange slices, orange peel strips, maple syrup if using, and the pinch of salt.
  2. Heat gently. Warm over medium heat until the cider reaches a bare simmer — small bubbles around the edges, steam rising, but not a rolling boil. This takes about 10 minutes. Boiling hard is the enemy here; it muddies the flavor.
  3. Simmer low and slow. Reduce the heat to low and let it simmer gently for 30 to 45 minutes. The longer it sits, the deeper the spice flavor. Taste at 30 minutes and decide if you want to push it further.
  4. Sweeten to taste. Fresh cider varies a lot in sweetness depending on the apples. Stir in the vanilla if using, taste, and add maple syrup or brown sugar a spoonful at a time if you want it sweeter. Some batches need none at all.
  5. Strain or don’t. For a clean pour, strain the cider through a fine-mesh strainer into a clean pot or a heatproof pitcher. For a rustic, serve-it-from-the-pot situation, just ladle around the spices and leave them in — they keep infusing.
  6. Serve hot. Ladle into mugs. Float a fresh orange round or a thin apple slice in each mug if you like, and hand out cinnamon sticks as stirrers. Keep the pot on the stove’s lowest setting for refills.

Tips for Success

Cider vs. juice — it matters. “Apple cider” in the jug from the produce aisle is pressed, unfiltered, and full of apple flavor. Clear, shelf-stable apple juice is filtered and sweetened and makes a noticeably thinner, sweeter drink. If juice is genuinely all you can get, cut the sweetener entirely and add a squeeze of lemon at the end to fake some of the fresh cider’s tang.

Whole spices only. Ground cinnamon and cloves stirred into cider make a murky drink with grit at the bottom of every mug. Whole spices infuse cleanly and strain out completely. If you don’t want to fish them out, tie them in a square of cheesecloth or put them in a tea infuser ball before they go in the pot.

Mind the pith. When you peel the orange, take the colored part only. The white pith is bitter, and over a 45-minute simmer it will make its presence known. A vegetable peeler makes wide, pith-free strips easy.

The salt is not a mistake. A tiny pinch won’t make the cider taste salty; it sharpens the apple flavor and keeps the sweetness from tasting flat. Trust it.

Variations

  • Caramel apple cider: Stir 3 tablespoons of caramel sauce into the hot pot and serve each mug with whipped cream and another drizzle of caramel. This is the coffee-shop version, and it costs you almost nothing to make at home.
  • Ginger kick: Add 4 to 5 thin slices of fresh ginger with the spices. It brings a warm heat that pairs beautifully with the cloves.
  • Spiked (for adults): Add 1 to 1 1/2 cups of bourbon, dark rum, or apple brandy after the simmer, off the heat, and warm it through without boiling so the alcohol doesn’t cook off. Serve the plain pot to everyone and spike individual mugs if the crowd is mixed.
  • Cranberry cider: Replace 2 cups of the cider with unsweetened cranberry juice and add a handful of fresh cranberries. Tart, ruby-colored, and excellent for holiday tables.
  • Slow cooker method: Combine everything in a slow cooker and cook on LOW for 3 to 4 hours or HIGH for 1 1/2 to 2 hours. This is the move for parties — set it to WARM and it holds all evening.

Storage and Make-Ahead

Refrigerator: Strain the cider and store it in a covered pitcher or jar for up to 5 days. The spice flavor continues to develop; by day three it’s at its best.

Reheating: Warm it gently on the stovetop over low heat until steaming. Avoid boiling on the reheat for the same reason as the first time — the flavor stays fresher.

Freezing: Cider freezes fine for up to 3 months, though the spices mellow. Freeze in portions and thaw in the fridge overnight. Frozen into ice cubes, it’s also a great way to chill fall sangria or punch without watering it down.

Make ahead for a party: Simmer the cider the day before, strain it, and refrigerate. Reheat it in the slow cooker on the day, starting about an hour before guests arrive. One less thing competing for stove space.

Frequently Asked Questions

How long can the cider sit out at a party?
On the stove at a low simmer or in a slow cooker on WARM, it holds well for 4 to 5 hours. As it sits, the spices keep infusing — pull the whole spices out after about 2 hours if you don’t want the clove flavor to take over.

Can I use ground spices if that’s all I have?
In a pinch: 1 teaspoon ground cinnamon, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground allspice, whisked in well. The cider will be cloudier and may have a little sediment, so let it settle and ladle from the top. It works, but whole spices are better.

Is this the same as mulled cider or wassail?
Close cousins. Mulled cider is exactly this idea — cider simmered with mulling spices. Wassail traditionally includes other juices, sometimes eggs or ale in old recipes. Call this one mulled cider and nobody will argue.

My cider came out too sweet. Help?
Stir in a squeeze of lemon juice or a splash of apple cider vinegar, a teaspoon at a time, and a tiny extra pinch of salt. Acid fixes sweetness faster than diluting does.
