This slow cooker pulled pork is the definition of set-it-and-forget-it cooking: fifteen minutes of rubbing spices in the morning, and by dinnertime you’ve got a mountain of smoky, juicy, fall-apart pork that feeds a crowd with almost zero effort.

The secret is the cut. Pork shoulder (also called Boston butt) is loaded with fat and connective tissue that a long, gentle cook transforms into pure tenderness — this is not a cut you rush. Eight to ten hours on LOW takes the meat to 195–205°F (90–96°C), the sweet spot where collagen melts into gelatin and the pork practically shreds itself. A smoky-sweet dry rub and a splash of apple cider vinegar round everything out.

This is my go-to for game day, potlucks, and any night a crowd of hungry people shows up. For another easy sandwich-night win, our easy sloppy joe recipe is a weeknight lifesaver. And if you’re building a full game-day spread, pair it with our crispy air fryer chicken tenders. But the pulled pork? That’s the main event.

Ingredients

For the Pork

  • 1 (4 to 5-lb / 1.8 to 2.3-kg) boneless pork shoulder (Boston butt)
  • 1 large yellow onion, thickly sliced (about 10 oz / 280 g)
  • 4 garlic cloves, smashed
  • 1 cup (240 ml) low-sodium chicken broth or apple juice
  • 2 tablespoons (30 ml) apple cider vinegar

For the Smoky Dry Rub

  • ¼ cup (50 g) packed brown sugar
  • 2 tablespoons (14 g) smoked paprika
  • 1 tablespoon (9 g) garlic powder
  • 1 tablespoon (7 g) onion powder
  • 1 tablespoon (18 g) kosher salt
  • 2 teaspoons (4 g) freshly ground black pepper
  • 2 teaspoons (4 g) ground cumin
  • 1 teaspoon (2 g) dry mustard powder

For Serving

  • 1½ cups (360 ml) barbecue sauce, plus more for serving
  • 12 brioche buns, toasted
  • 3 cups (about 400 g) coleslaw
  • Pickles and sliced red onion (optional)

Pork shoulder, a smoky dry rub, and aromatics — that’s all it takes.

Instructions

  1. In a small bowl, stir together the brown sugar, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, cumin, and mustard powder. Pat the pork shoulder completely dry with paper towels, then rub the spice mixture all over it, pressing firmly so it adheres to every side and into every crevice.
  2. Scatter the sliced onion and smashed garlic cloves over the bottom of a 6-quart (or larger) slow cooker — they’ll act as a rack and flavor the drippings. Pour in the chicken broth (or apple juice) and apple cider vinegar, then set the seasoned pork on top of the onions. The liquid won’t cover the meat, and that’s fine; the pork will release plenty of its own juices.
  3. Cover and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours if you’re short on time. The pork is done when it’s completely tender and shreds easily when prodded with a fork — internally it should read 195–205°F (90–96°C). Don’t pull it early: that high finish temperature is what melts the collagen and makes the meat shreddable instead of sliceable.
  4. Transfer the pork to a large cutting board or rimmed sheet pan and let it rest 10 to 15 minutes. Then shred it with two forks, pulling the meat into bite-size strands and discarding any large pieces of fat or gristle. It should fall apart with almost no effort.
  5. Strain the cooking liquid from the slow cooker into a fat separator, or skim the fat from the surface with a spoon. Toss the shredded pork with about 1 cup of the defatted cooking juices — this is the key to juicy (never dry) pulled pork. Stir in the barbecue sauce to taste, starting with less and adding more until it’s as saucy as you like.
  6. Pile the pulled pork high onto toasted brioche buns, crown with a scoop of cool, crunchy coleslaw and an extra drizzle of barbecue sauce, and serve warm. Pass the pickles and sliced red onion at the table for anyone who wants them.

Tips & Variations

  • Bone-in or boneless both work. Bone-in shoulders are often cheaper and the bone slides right out when the pork is done — just add about 30 minutes to the cook time. Either way, look for good marbling.
  • Don’t lift the lid. Every peek lets out heat and adds 15 to 20 minutes to the cook. Trust the process and check once, near the end.
  • Crisp it up for carnitas vibes. Spread the shredded pork on a sheet pan and broil 4 to 5 minutes until the edges caramelize — incredible in tacos.
  • Adjust the sweetness. Prefer a less sweet rub? Cut the brown sugar in half and bump up the smoked paprika and black pepper for a more savory, peppery bark.
  • No barbecue sauce needed. The pork is fantastic with just the seasoned cooking juices — try it Carolina-style with a vinegar-based slaw and a splash of hot sauce.

Storage

Refrigerate leftovers in an airtight container (with their juices) for up to 4 days. For longer storage, portion the shredded pork into freezer bags with a little of the cooking liquid, press out the air, and freeze for up to 3 months. Thaw overnight in the refrigerator, then reheat gently in a covered skillet over low heat or in a 300°F (150°C) oven, adding a splash of broth or barbecue sauce if it needs moisture.

What cut of pork is best for pulled pork?

Pork shoulder — sold as Boston butt (the upper shoulder) or picnic shoulder. It’s well-marbled with fat and collagen that break down over the long cook. Avoid lean cuts like pork loin or tenderloin; they’ll dry out long before they shred.

Can I cook pulled pork on HIGH instead of LOW?

Yes — 4 to 5 hours on HIGH works. But LOW for 8 to 10 hours gives you more tender, more flavorful results, since the collagen has more time to melt gently. If you can plan ahead, LOW is worth it.

Why isn’t my pork shredding?
