These are the rolls I make when I want the morning to feel like a celebration: soft, swirly, unapologetically gooey, and finished with a cream cheese frosting that melts into every crevice.

What sets a great cinnamon roll apart from a merely good one comes down to three things: a rich, tender dough that stays soft for days, a filling with enough butter and brown sugar to turn jammy rather than dry, and frosting applied while the rolls are still warm so it seeps in instead of sitting on top. This recipe nails all three. The dough uses both butter and eggs for a brioche-like tenderness, and a double rise gives it that cloud-soft texture.

Don’t let the yeast scare you. If you can stir and wait, you can make these. The total hands-on time is about half an hour; the rest is just the dough doing its thing while you go about your morning. By the time the frosting is whipped, your kitchen will smell like the best bakery on the block.

  • 240 ml (1 cup) warm whole milk (110°F / 43°C)
  • 7 g (2 1/4 teaspoons) active dry yeast
  • 100 g (1/2 cup) granulated sugar, divided
  • 75 g (1/3 cup) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 500 g (4 cups) all-purpose flour, plus more for dusting
  • 5 g (1 teaspoon) fine sea salt

For the Cinnamon Filling

  • 115 g (1/2 cup) unsalted butter, very soft
  • 220 g (1 cup, packed) dark brown sugar
  • 16 g (2 tablespoons) ground cinnamon

For the Cream Cheese Frosting

  • 115 g (4 oz) cream cheese, softened
  • 60 g (1/4 cup) unsalted butter, softened
  • 120 g (1 cup) powdered sugar
  • 5 ml (1 teaspoon) vanilla extract
  • Pinch of salt

Instructions

  1. Activate the yeast. In a large bowl or the bowl of a stand mixer, stir the yeast and 1 tablespoon of the granulated sugar into the warm milk. Let it stand for 5 to 10 minutes until foamy and fragrant. If it doesn’t foam, your yeast is dead — start over with fresh yeast rather than wasting the ingredients.
  2. Mix and knead the dough. Whisk the melted butter, eggs, and remaining sugar into the yeast mixture. Add the flour and salt, and mix until a shaggy dough forms. Knead for 8 to 10 minutes (by mixer with the dough hook on medium-low, or by hand on a floured surface) until the dough is smooth, elastic, and slightly tacky but not sticky. It should spring back slowly when poked.
  3. First rise. Shape the dough into a ball, place it in a lightly greased bowl, turning once to coat, and cover with plastic wrap or a damp towel. Let it rise in a warm, draft-free spot for 1 to 1 1/2 hours, until doubled in size. A turned-off oven with the light on is a perfect proofing box.
  4. Roll and fill. On a lightly floured surface, roll the dough into a 16×12-inch (40×30 cm) rectangle. Spread the very soft butter evenly over the surface, right to the edges. In a small bowl, mix the brown sugar and cinnamon, then sprinkle it evenly over the butter, leaving a 1/2-inch clean border along one long edge — this helps seal the roll.
  5. Roll up and slice. Starting from the long edge opposite the clean border, roll the dough up into a tight log, pinching the seam to seal. For the cleanest cuts, slide a piece of unflavored dental floss under the log, cross the ends over the top, and pull — you’ll get perfect rounds without squishing the swirl. Cut into 12 equal rolls, about 1 1/4 inches thick each.
  6. Second rise. Butter a 9×13-inch (23×33 cm) baking pan and arrange the rolls cut-side up with a little breathing room between them. Cover loosely and let rise 30 to 45 minutes, until puffy and touching. Meanwhile, preheat the oven to 350°F (175°C).

  1. Bake. Bake for 25 to 28 minutes, until the tops are golden brown and the centers register 190°F (88°C) on an instant-read thermometer. If the tops brown too quickly, tent loosely with foil for the last 10 minutes.
  2. Frost while warm. While the rolls bake, beat the cream cheese and butter until smooth, then beat in the powdered sugar, vanilla, and salt until fluffy. Spread generously over the rolls while they’re still warm — about 10 minutes out of the oven — so the frosting melts into all the swirls. Serve immediately.

  • Overnight method: After slicing, cover the pan tightly and refrigerate overnight instead of the second rise. In the morning, let the rolls sit at room temperature for 45 to 60 minutes while the oven preheats, then bake as directed.
  • Extra gooey: Pour 120 ml (1/2 cup) of warm heavy cream over the rolls just before baking. It sounds strange, but it creates an almost pudding-like bottom layer.
  • Nutty twist: Sprinkle 75 g (3/4 cup) of chopped toasted pecans over the filling before rolling up.
  • Don’t overbake: Pull them when the centers are just set. Overbaked rolls turn bready and dry; slightly underdone centers finish cooking from residual heat and stay gooey.

Storage

Store frosted rolls covered at room temperature for up to 2 days, or refrigerate for up to 5 days. Rewarm individual rolls in the microwave for 20 to 30 seconds to bring back that fresh-baked softness. To freeze, wrap unfrosted baked rolls tightly in plastic wrap and foil for up to 3 months; thaw overnight in the fridge, warm in a 300°F (150°C) oven, and frost fresh. Unbaked sliced rolls can also be frozen in the pan — thaw in the fridge overnight, let rise, and bake.

Can I use instant yeast instead of active dry?

Yes — use the same amount and skip the proofing step; just mix it directly into the flour. The rise times stay roughly the same.
