Some recipes are about showing off, and some are about showing up. This cornbread is the showing-up kind — the thing that makes a pot of chili feel like a meal, that gets passed around the table still warm from the skillet, that disappears slice by slice until someone asks, “Is there any more?” The secret weapon isn’t complicated: a screaming-hot cast iron skillet that sears the batter the second it lands, giving you a crackly, buttery crust no baking dish can match.
This is a Northern-style cornbread — tender, a little sweet, cake-like in the middle with those crisp edges. If you grew up on unsweetened Southern cornbread and think sugar is sacrilege, I respect your position, but try this once. The honey butter on top is the real move: whipped, salty-sweet, and melting into every crumb.
It comes together in one bowl in fifteen minutes, which makes it the easiest impressive side in my rotation. And when the cornbread is gone, our angular banana bread keeps the quick-bread love going all week.

Ingredients
For the Cornbread
- 1 1/2 cups (190 g) fine yellow cornmeal
- 1 1/2 cups (190 g) all-purpose flour
- 1/3 cup (65 g) granulated sugar
- 1 tablespoon (15 g) baking powder
- 1 teaspoon (6 g) fine sea salt
- 1 1/2 cups (355 ml) buttermilk, at room temperature
- 2 large eggs, at room temperature
- 1/2 cup (115 g) unsalted butter, melted and slightly cooled
- 2 tablespoons (28 g) unsalted butter, for the skillet
For the Honey Butter
- 1/2 cup (115 g) unsalted butter, softened
- 1/4 cup (85 g) honey
- 1 pinch fine sea salt

Instructions
- Heat the skillet. Place a 10-inch (25 cm) cast iron skillet in the oven, then preheat to 400°F (200°C). Heating the skillet with the oven is the whole trick — the hot iron sets the crust the instant the batter hits it. Don’t skip this.
- Mix the dry ingredients. In a large bowl, whisk the cornmeal, flour, sugar, baking powder, and salt until well combined.
- Mix the wet ingredients. In a separate bowl, whisk the buttermilk, eggs, and melted butter until smooth. Room-temperature ingredients blend better and bake more evenly — cold buttermilk can re-solidify the butter into little flecks.
- Combine gently. Pour the wet ingredients into the dry and stir with a wooden spoon just until no dry streaks remain. A few small lumps are perfectly fine. Overmixing develops gluten and turns tender cornbread tough and dense.
- Butter the hot skillet. Carefully pull the screaming-hot skillet from the oven (use good mitts). Drop in the 2 tablespoons of butter and swirl it around until it melts completely and coats the bottom and sides, sizzling and foaming.
- Pour and bake. Pour the batter into the hot skillet — you should hear it sizzle at the edges. That’s the crust forming. Return to the oven immediately and bake 20-25 minutes, until the top is deep golden brown and a toothpick inserted in the center comes out clean.

- Whip the honey butter. While the cornbread bakes, beat the softened butter, honey, and salt with an electric mixer for 2 minutes until pale, light, and fluffy. It should look like frosting.
- Serve warm. Let the cornbread cool in the skillet for 10 minutes — it finishes setting up — then cut into wedges and serve with big swoops of honey butter melting over the top.
Tips & Variations
- No cast iron? A 9-inch square metal baking pan works — just don’t preheat it the same way. Grease it well and add 2-3 minutes to the bake.
- Jalapeño cheddar. Fold in 1 cup (100 g) shredded sharp cheddar and 1 diced jalapeño (seeds removed) for a spicy-savory version.
- Bacon and scallion. Add 1/2 cup crumbled cooked bacon and 3 sliced scallions to the batter. Breakfast cornbread of champions.
- Less sweet. Cut the sugar to 2 tablespoons for a more savory, Southern-leaning crumb — but keep the honey butter.
- Don’t overbake. The line between moist and dry is thin. Start checking at 20 minutes; the toothpick should come out clean but not bone-dry.
Storage
Store cooled cornbread tightly wrapped at room temperature for up to 2 days, or in the fridge for 5 days. Reheat slices in a 350°F (175°C) oven for 5 minutes or toast them in a buttered skillet — the edges crisp right back up. Serve it with chili, then save room for something sweet from our desserts collection. Freeze wedges in a zip-top bag for up to 2 months. Keep honey butter in the fridge for up to 2 weeks; let it soften at room temperature before serving.
FAQ
Why is my cornbread dry?
Almost always overbaking or overmixing. Measure your flour by weight if you can, stir just until combined, and start checking for doneness at 20 minutes.
Can I use a different milk instead of buttermilk?
Yes — whole milk works, though the crumb will be slightly less tender and tangy. For a quick substitute, stir 1 tablespoon of lemon juice or vinegar into 1 1/2 cups of milk and rest 5 minutes.
Fine or coarse cornmeal — does it matter?
Fine cornmeal gives a tender, cake-like crumb; medium or coarse gives a heartier, more rustic texture. Both work in this recipe — use what you like. Avoid self-rising cornmeal mix, which has leavening and salt already added.
Can I make it dairy-free?
Use plant-based butter and a dairy-free milk soured with lemon juice. The texture will be slightly different but still delicious.
