Sliced beef Wellington with medium-rare center wrapped in golden puff pastry

Beef Wellington has a reputation as the Mount Everest of home cooking. But with a few smart shortcuts, it is genuinely doable on a regular weekend. This easy version keeps all the drama — golden pastry, savory mushroom layer, perfect rosy center — while removing the parts that cause failures.

The strategy is simple. Sear the tenderloin first for flavor, wrap it in prosciutto (a moisture barrier so the pastry stays crisp), use store-bought puff pastry, and — most importantly — cook to temperature, not time. Pull it at 130°F (54°C) and you get a flawless medium-rare every time. If you have made my creamy garlic Tuscan chicken, you already have the core sear-and-roast skill. And for another showstopper main, my classic homemade beef lasagna feeds the same kind of celebration crowd.

A full rest and a serrated knife are the final secrets. Let us build it step by step.

Why You’ll Love This Recipe

  • Truly no-fail method: Prosciutto barrier + dry duxelles + temperature target removes the three classic Wellington disasters: soggy pastry, gray beef, and guesswork.
  • Store-bought pastry: Good puff pastry from the freezer aisle is flaky, reliable, and saves hours. No shame in it — restaurants do the same.
  • Make-ahead friendly: Assemble the whole log a day ahead and refrigerate; bake straight from the fridge when guests arrive.
  • Maximum wow, honest effort: About 30 minutes of active work for a centerpiece that looks like you trained in Paris.
  • Perfect for holidays: Christmas, New Year’s Eve, anniversaries — this is the main event dinner.

Ingredients

For the beef

  • 1 center-cut beef tenderloin (about 2 lb / 900 g), trimmed and tied
  • 2 tablespoons (30 g) Dijon mustard
  • 1 tablespoon (15 ml) olive oil, for searing
  • 1 teaspoon (6 g) kosher salt
  • 1/2 teaspoon (1 g) black pepper

For the mushroom duxelles

  • 1 lb (450 g) cremini or button mushrooms, finely chopped
  • 1 small shallot (about 40 g), finely minced
  • 2 cloves garlic (10 g), minced
  • 2 tablespoons (8 g) fresh thyme leaves
  • 1 tablespoon (15 ml) olive oil
  • 2 tablespoons (28 g) unsalted butter
  • 1/4 cup (60 ml) dry white wine or brandy (optional)
  • 1/2 teaspoon (3 g) kosher salt
  • 1/2 teaspoon (1 g) black pepper

For assembly

  • 8 to 10 thin slices prosciutto (about 4 oz / 115 g)
  • 1 sheet puff pastry (about 10 oz / 280 g), thawed
  • 1 large egg beaten with 1 tablespoon water (egg wash)
  • Flaky sea salt, for sprinkling

Instructions

  1. Make the duxelles first — it must cool completely. Pulse the mushrooms until finely chopped (not pureed). Heat 1 tablespoon olive oil and the butter in a large skillet over medium-high heat, then add the mushrooms, shallot, garlic, thyme, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Cook 10 to 12 minutes, stirring, until all moisture evaporates and you have a dark, dry paste. Wet duxelles equal soggy pastry, so do not rush this. Deglaze with the wine if using, cook 1 minute more, spread on a plate, and cool completely.
  2. Sear the beef: pat the tenderloin dry and season all over with the remaining salt and pepper. Heat the last tablespoon of olive oil in the same skillet over high heat until smoking. Sear the tenderloin 1 to 2 minutes per side, turning with tongs, until browned all over — you are building flavor, not cooking it through. Brush the warm beef generously with Dijon mustard, then refrigerate 20 minutes (or up to 2 hours) until cold to the touch. Cold beef going into pastry is another anti-soggy insurance policy.
  3. Build the wrap: lay a large sheet of plastic wrap on the counter. Overlap the prosciutto slices into a rectangle a little larger than your tenderloin. Spread the cooled duxelles evenly over the prosciutto, leaving a 1-inch border all around. Set the cold tenderloin along one long edge and roll everything up tightly, using the plastic wrap to pull it snug. Twist the ends of the wrap like a sausage casing to compact the log, then refrigerate 20 minutes to firm up.
  4. Preheat the oven to 400°F (200°C). On a lightly floured surface, roll the puff pastry into a rectangle big enough to enclose the beef log with about an inch of overlap. Unwrap the chilled beef, set it in the center of the pastry, and fold the pastry around it, brushing the seam and ends with egg wash to seal. Trim any excess, place seam-side down on a parchment-lined baking sheet, and brush the entire surface with egg wash. Score a light crosshatch or leaf pattern with the tip of a knife — decorative only, do not cut through — and sprinkle with flaky salt.
  5. Bake 35 to 40 minutes, until the pastry is deeply golden brown and puffed. The real test: insert an instant-read thermometer through the pastry into the very center of the beef. Pull it at 130°F (54°C) for a perfect medium-rare — carryover heat will bring it to about 135°F (57°C) as it rests. Rest the Wellington a full 15 minutes before slicing into 1-inch pieces with a serrated knife, using a gentle sawing motion so the pastry does not shatter.

Tips & Variations

  • Chill at every stage: Cold duxelles, cold beef, chilled log — this is the biggest factor in crisp pastry.
  • Do not skip the prosciutto: Beyond flavor, it is a moisture barrier between the juicy beef and the pastry. Parma ham works too; skip it only if you must, and expect a slightly softer bottom crust.
  • Thermometer through the pastry: It feels wrong to poke the beautiful crust, but one small hole is invisible and it is the only way to nail the internal temp. Aim for the center of the thickest part.
  • Individual Wellingtons: Use 6-oz filet mignons, wrap each in a quarter of the components, and bake 25 to 30 minutes to 130°F (54°C). Elegant and portion-controlled.
  • Pâté layer (classic): For the traditional touch, spread a thin layer of pâté or foie gras mousse over the duxelles before rolling. Rich, old-school, delicious.

Storage

Refrigerate leftovers in an airtight container for up to 3 days. Reheat slices in a 350°F (175°C) oven for 10 to 12 minutes — the pastry re-crisps and the center warms without overcooking. Avoid the microwave, which turns the pastry gummy. Unbaked assembled Wellington can be refrigerated up to 24 hours before baking; add 5 minutes to the bake time if going in cold from the fridge.

FAQ

Why did my Wellington come out soggy on the bottom?

Usually wet duxelles, warm components, or a missing prosciutto barrier. Cook the mushrooms until truly dry, chill everything before baking, and keep the prosciutto layer.

What temperature should beef Wellington be inside?

Pull it at 130°F (54°C) for medium-rare — it will coast to about 135°F (57°C) while resting. For medium, pull at 140°F (60°C). Going past 150°F (65°C) will dry out the tenderloin.

Can I use frozen puff pastry?

Yes. Thaw overnight in the fridge or about 40 minutes on the counter until pliable but cold. If it gets warm and sticky, chill it 10 minutes.

Can I assemble beef Wellington ahead of time?

Definitely. Assemble the full log (through the pastry wrap), cover tightly, and refrigerate up to 24 hours. Brush with egg wash just before baking and add about 5 minutes to the bake time.
